TAPIOCA STEAM LAYER KUIH / LAPIS KUKUS UBI KAYU


This is one of my favorite kuih. I learned this from my Home Science Class. A simple recipe with only tapioca, sugar, coconut milk and desire colouring and steam until cooked.

INGREDIENTS - Source mykitchensnippets.blogspot

400 gm of grated Tapioca/cassava/ 400 gm ubi parut
100g Sugar / 100 gm gula
2 tbsp of corn starch / 2 sdb tepung jagung
120 ml coconut milk / 120 ml santan
2 pandan leaves / 2 helai daun pandan
Pinch Of Salt / secubit garam
1 cup fresh grated white Coconut + 1/4 tsp of salt / 1 cawan kelapa parut bersama 1/4 sdt garam

1. Steam grated white coconut with salt for about 5 minutes, then set aside to cool./ Kukuskan kelapa parut selama 5 minit dan ketepikan.
2. Squeeze any access liquid from the tapioca then mix the sugar, corn starch, coconut milk and a pinch of salt together. Mix well./ Perah lebihan air pada ubi kayu. Masukkan gula, tepung jagung , santan dan garam. Gaul rata.
3. Divide mixture into equally into two portion and color your favorite color. / Bahagikan adunan kepada dua bahagian dan warnakan mengikut warna kegemaran anda.
4.  Grease a pan with some cooking oil, pour mixture in, lay the pandan leave on top and steam first layer over medium heat for about 15 minutes./Oleskan acuan dengan minyak masak dan letakkan daun pandan dan kukus lapisan pertama selama 15 minit.
5.  Add in the second layer and steam for another 15 minutes./ Masukkan lapisan kedua dan kukus lagi 15 minit.
6. Remove from heat, cool completely and remove the pandan leaves./Alihkan dari api, sejukkan dan buang daun pandan.
7. Cut to desire shape, coat with grated coconut and serve./ Potong mengikut selera anda dan gaulkan dengan kelapa parut.

Lapis kukus ubi kayu ini sama seprti membuat sago bronok. Mudah membuatnya dan sesuai sebagai sajian petang. Pilihan warna dan bentuk bergantung kepada selera masing-masing. Kuih ini merupakan salah satu daripada koleksi kuih Nyonya dan terkenal di Malaysia, Singapore dan juga Thailand. Boleh dikatakan kuih ini dikenali dikebanyakkan negara-negara Asia Tenggara.
