This is another hawkers or food Court favorite. Rice is desirably is cooked in a clay pot on charcoal stove as the rice will form a brown , crispy layer at the bottom of clay pot, thus making the rice more fragrant. One small size claypot fit 1 cup of rice just nice for 1 serving.
To retain the authentic of the dish it is best to use the claypot. However in the absence of the claypot you can use the normal rice cooker.
INGREDIENTS
1 cup rice, washed and drained / 1 cawan beras dibasuh bersih dan toskan
1 cup chicken stock / 1 cawan air atau stok ayam
1 cup bites size chicken / 1 cawan ayam dipotong kecil
2 Chinese mushrooms, soaked, cut into half / 2 cendawan kering direndam dan hiris halus
1 ½ cm thick salted fish, sliced thinly, fried till crispy / 1 1/2 " ikan masin fihiris halus
1 tbsp black soya sauce / 1 sdb kicap pekat
4 tbsp garlic oil / 3 sdb minyak bawang putih

1 tbsp black soya sauce / 1 sdb kicap pekat
4 tbsp garlic oil / 3 sdb minyak bawang putih
1 egg optional / 1 biji telur
Marinade:
2 tbsp light soy sauce/ 2 sdb kicap cair
2 tbsp oyster sauce . 2 sdb sos tiram
1 tbsp dark soy sauce / 1 sdb kicap pekat
1 tsp of ginger juice (grated a knob of ginger and squeeze)/ 1 sdt air halia
1 tbsp sesame oil/ 1 sdb minyak bijan
½ tsp peppe / 1/2 sdt lada sulah
½ tsp sugar / 1/2 sdt gula
½ tbsp corn flour/ 1/2 sdt tepung jagung
Garnishing:
Spring onion chopped / daun bawang dihiris halus
Method:
Marinade:

2 tbsp oyster sauce . 2 sdb sos tiram
1 tbsp dark soy sauce / 1 sdb kicap pekat
1 tsp of ginger juice (grated a knob of ginger and squeeze)/ 1 sdt air halia
1 tbsp sesame oil/ 1 sdb minyak bijan
½ tsp peppe / 1/2 sdt lada sulah
½ tsp sugar / 1/2 sdt gula
½ tbsp corn flour/ 1/2 sdt tepung jagung
Garnishing:
Spring onion chopped / daun bawang dihiris halus
Method:
- Mix chicken, mushrooms with marinade and ginger, season for 30 minutes./ Satukan ayam, cendawan, halia dan bahan perapan. Perapkan selama 30 minit.
- Put rice and chicken stock into a clay pot, cover and bring to boil lower fire and cook with low heat till holes are formed on top. (About 15 minutes)/ Masukkan nasi dan air ke dalam claypot dan masak dengan api kecil selama 15 minit.
- Spread marinated chickens and mushrooms, cover and cook with low heat till rice is dry and chicken pieces are cooked (another 15 minutes). Remove from fire./ Apabila nasi kering masukkan ayam yang diperap tadi dan masak hingga ayam empuk.
- Sprinkle salted fish on top, cover and leave to stand for 10 minutes till rice is dry and fluffy. / Taburkan ikan masin dan biarkan selama 10 minit lagi.
- Before serving, sprinkle spring onion , black soya sauce and garlic oil, mix in to combine toppings and rice./Semasa hidang curahkan kicap pekat, minyak bawang putih dan daun bawang.

Calypot Chicken Rice ini memang sedap, rasanya memang menjadi favorite anak-anak sebab rasa kicapnya dan tidak pedas. Biasanya dijual di Food Court tetapi nak dapat yang halal agak payah la sebab sajian ini adalah sajian masyarakat Cina. Kalau ada pun kadang-kadang tekak ni rasa was-was juga. Jadi jawapan kepada kesemua kemusykilan ini ialah buat sendiri.
Resipi dan bahanya agak mudah tetapi yang agak leceh sedikit ialah hendak memasaknya. Namanya Claypot Chicken Rice, maka kena masak guna Claypot dan perlu masak satu persatu. Satu claypot bersize kecil ni muat untuk satu cawan nasi. Sukatanya mudah aje. 1 cawan beras, 1 cawan air dan bahan-bahan untuk ayam. Nasi ini kalau dimasak biarkan kerak-kerak sedikit, memang sedap. Lagi kerak lagi bagus.
