The children went for bowling, I went for my medical check up, so we skipped lunch yesterday. Tyca mood wasn't good either, may be because of her Add Maths paper. To cheer her up and to ensure that she is in her jolly good mood for tomorrow Physics paper, I prepared dinner the family's favorite, Steam Fish Thai Style, Stir Fried Asparagus with Straw Mushroom and Mayo Omlette.
I spent roughly RM30 for these three dishes. How much it gonna cost you if you dine outside? I bet double the price. So why waste?

THAI STYLE STEAM FISH/ IKAN KUKUS ALA THAI
Steam Fish Thai Style/Ikan Kukus Ala Thai |
INGREDIENTS
Fish (any meaty white fish) weight 400-500 grams- I used Siakap, marianate with salt and pepper/ I ekor ikan siakap, perap dengan lada sulah dan garam.
Ingredient (A)
2 scallions, cut into 1" long/2 tangkai daun bawang-dihiris
3-5 chilies, chopped/3-5 biji cili dihiris
3 kaffir Leave chopped/ 3 helai daun limau purut dihiris
1 bunga kantan chopped/ 1 kuntum bunga kantan-dihiris
2 lemon grass chopped/ 2 batang serai-dihiris
2 stalk coriander leave chopped/ 2 tangkai daun ketumbar-dihiris
6 cloves garlic, chopped/ 6 ulas bawang putih dimayang-dihiris
Seasoning - Ingredient (B)
2 tablespoons fish sauce/ 1 sdb sos ikan
4 tablespoons lime juice/ 4 sdb air limau nipis
1/2 cup chicken stock/ 1/2 cawan stok ayam
METHOD
Clean and score the fish at an angle all the way to the bones on both sides to help it cook faster. Set fish on a heat-proof plate which is able to put in a steamer./Bersihkan ikan dan kelar sehingga ke tulang. Letak ikan di atas pinggan yang tahan kukusan.
Heat water in a steamer until boiling./ Panaskan kukusan.
In a medium-sized bowl,mix ingredients (A) and (B) Stir until mixed well. Pour to the fish./ Dalam mangkuku bancuhan campurkan bahan (A) dan (B). Gaul rata. Curahkan ke atas ikan.
Steam the fish for 15 - 20 minutes./Kukus selama 15 - 20 minit
Remove the steamed fish from the steamer garnish with coriander leave/ Alihkan ikan dan taburkan daun ketumbar.

Mayo Omlette/Telur Dadar Mayo |
3 eggs (large) 3 biji telor
1/2 cup vegetable oil/ 1/2 cawan minyak masak
1 tablespoon fish sauce or 2 tablespoon light soy sauce/ 1 sdb sos ikan
2 tbs mayonnaise/ 2 sdb mayonis
1 onion chopped/ 1 biji bawang besar dimayang
1 red chilli chopped/ 1 biji cili merah dihirisw halus
1 scallion chopped/ 1 batang daun bawang dihiris halus
pepper and salts/lada sulah dan garam secukup rasa.
METHOD
Heat the vegetable oil in a pan./ Panaskan kuali
Break eggs into a bowl and whisk it with a fork until well mixed then add the fish sauce Pecahkan telor dan pukul rata..
Add in onion,scallions, chilli, mayonaisse, salt, and pepper to taste. Masukkan bawang cili, daun bawang, mayonis, lada sulah dan garam secukup rasa.
When the vegetable oil is smoking hot, pour the egg mixture into the hot oil./ Bila minyak sudah cukup panas, masukkan telur yang dipukul tadi.
When browned (about 20 seconds) then flip the side and wait until the other side is browned (about 15 seconds)./ Masak hingga masak dan kekuning-kuningan.
When omelette is done (golden brown on both sides) then transfer to a dish / Apabila telor sudah masuk letakan di atas pinggan hidangan.

STIR FRIED ASPARAGUS WITH STRAW MUSHROOM/ ASPARAGUS GORENG CENDAWAN
Stir Fried Asparagus with Straw Mushroom/ Asparagus Goreng Dengan Cendawan |
1 group asparagus cut about 2 inch/ 1 ikat asparagus potong sepanjang 2 inch
1/2 can straw mushroom cut into 2/1/2 tin cendawan belah dua
1/2 can straw mushroom cut into 2/1/2 tin cendawan belah dua
1 packet baby corn cut into 2/1 paket jagung muda dibelah dua
1/2 cup fresh shrimp/ 1/2 cawan udang hidup
½ cup chicken stock/ 1/2 cawan stok ayam
2 tbsp. cooking oil/ 2 sdb minyak masak
3 tbsp. oyster sauce/ 3 sdb sos tiram
1 tbsp. light soy sauce/ 1 sdb kicap cair
3 gloves garlic (chopped)/ 3 ulas bawang putih dicincang
½ cup chicken stock/ 1/2 cawan stok ayam
2 tbsp. cooking oil/ 2 sdb minyak masak
3 tbsp. oyster sauce/ 3 sdb sos tiram
1 tbsp. light soy sauce/ 1 sdb kicap cair
3 gloves garlic (chopped)/ 3 ulas bawang putih dicincang
Blance asparagus, mushroom and baby corn./ Celur asparagus, cendawan dan jagung muda
After 3 minutes, remove the asparagus and mushrooms from the wok and using a colander, briefly run cold water over the asparagus and mushrooms, and then place them on the serving plate. Selepas 3 minit angkat, toskan dan letak asparagus, cendawan dan jagung muda itu ke dalam pinggan hidang.
Drain the water from the wok and add the cooking oil. Then heat the cooking oil using a medium high heat setting and after the cooking oil is hot, add the garlic./ Panaskan minyak tumiskan bawang putih, Masak hingga naik baunya.
Stir fry until fragrant, then add the shrimp, chicken stock, light soy sauce and oyster sauce. Stir until the sauce is mixed together thoroughly./ Masukkan udang, stok ayam, sos tiram, kicap cair, lada sulah dan garam secukup rasa.
Pour the sauce onto the asparagus and mushrooms that are on the serving platter/ Curahkan sos ke atas sayuran yang dicelur tadi.
