Another fantastic traditional kuih. This time around is a pancake method. We could call it traditional pancake with coconut filling. Wooola.....I love this kuih so much. Need to have self control once eaten. I normally prepare this for breakfast. This kuih is also perfect for functions. The hotels served this a lot on their High Tea menu. Easy to make and nice to eat.
INGREDIENTS
Batter
1 cup flour/ 1 cawan tepung
1 1/2 cup coconut milk/ 1 1/2 cawan santan
2 eggs / 2 biji telor
5 tbsp screwpine juice/ 5 sdb air daun pandan
salt to taste./Garam secukup rasa
corn oil for greasing/ minyak jagung untuk leser kuali

Combine and mix all. It could be better if blend. Sieve and put a aside./ Campur dan gaul semua bahan. Se-eloknya blend. Tapis dan letak sebelah.
Filling:
1 coconut - grated white/ 1 biji kelapa parut
3/4 cup palm sugar/ 3/4 cawan gula merah
pinch of salt/ garam secubit rasa
1/4 cup water/ 1/4 cawan air utnuk larut gula
screwpine leaf - knot/ daun pandan diikat.
Cook palm sugar with water till palm sugar dissolves./ Cairkan gula merah dan gula.

Cook palm sugar with water till palm sugar dissolves./ Cairkan gula merah dan gula.
Add grated coconut and salt, stir-fry till mixture is fairly dry.Remove and set aside./ Masukkan kelapa parut. Kacau rata dan letak sebelah.
METHOD
Heat flat-bottomed frying pan and pour in a little oil./ Panaskan kuali dan leserkan minyak.
Pour in 1 scoop batter and lightly swirl pan to let batter spread into a thin pancake./ Tuangkan seseduk adunan dan lenggangkan sedikit
Heat till pancake is cooked then remove and let cool./ Biar hingga masak
Place coconut filing on pancake, fold left and right side then roll up like a spring roll./ Letakkan inti dan gulung.

Lagi satu favorite saya, biasalah orang kencing manis ni memang suka benda-benda manis. Saya memang amat mengemari kuih ini. Anak-anak suka. Jadi kalau buat memang berbaloi, semua suka, jadi tak ada pembaziran. Selalunya kegemaran ramai ialah perasa pandan. Ada yang dah mewarna-warnikan kuih ini tetapi yang original juga jadi kmegemaran.
