DENDENG DAGING

There are two version of Dendeng Daging, the Padang, Indonesia version and the Malaysia version. The different is the way it was cooked. The Padang version the fried beefs are top up with fresh chili and onion while the Malaysia version the fried beef are cook with chili paste and soya sauce. Both have their unique taste. Today we are going to cook the Malaysia version Dendeng Daging.




INGREDIENTS
1kg beef/1 kg daging lembu

1 cup ketchup dark soya sauce/ 1 cawan kicap manis
3 tbsp tamarind juice/ 3 sdb air asam jawa
salts to taste
1/2 kg fried onion (optional)/ 1/2 kg bawang besar goreng (pilihan)
Chili Paste
1 tsp corriander/1 camca kecil ketumbar

1 tsp fennel/1 camca jintan manis
30 dried chili/30 tangkai cili kering
7 shallots/ 7 biji bawang merah
3 clove garlic/ 3 ulas bawang putih
1/2 inch ginger/ 1/2 inci halia


Blend all ingredients into paste.

METHOD

  • Cook the beef till  tender/Rebus daging hingga empuk
  • Cut the beef thinly 1-2 inch /  Potong daging nipis-nipis selebar 1 atau 2 inch
  • Ground the beef/Di tumbuk sedikit di dalam lesung (supaya tidak liat)
  • Marinate the beef with the thick soya sauce and put aside / Gaulkan bersama kicap masin dan manis (perap seketika)
  • Drain the soya sauce and fry the beef / Gorengkan sehingga sedikit garing.Ketepikan.
  • Heat up the oil, saute the chili pasted  fragrance. Add in salt and the remaining soya sauce. Add in the fried beef and fried onion. Cook until dry./ Panaskan minyak dan tumis bahan giling hingga naik baunya. Masukan kicap dan garam secukup rasa. Akhir sekali masukkan daging yang digoreng tadi bersama bawang besar goreng. Masak hingga agak kering dan padamkan api.

Saya selalu keliru apabila disebut dendeng daging. Saya selalu bayangkan dendeng daging masakan Padang, sehinggalah saya dijamukan dengan Nasi Lemak Dendeng Daging oleh kawan saya dari Sungai Petani. Mula mempelajari dan perkenalkan masakan tersebut kepada anak-anak. Ternyata mereka suka mungkin disebabkan manis kicap. Menariknya dendeng daging ini ialah rasanya pedas dan manis. Memang sajian yang sesuai diganfingkan dengan Nasi Lemak.
