Pulut Inti
is glutinous rice topped with caramelised grated coconut flesh and wrapped in a cut banana leaf to resemble a square pyramid. It is best served during breakfast. Popular among the Malays and Nyonya. I did this for my "buka puasa" menu. Just in case if my next door sent me something I got something to return back to her. Anyway I like this pulut, creamy and sweet.

INGREDIENTS
4 cups glutinous rice, soaked overnight or at least for 6 hrs/ 4 cawan pulut rendam semalaman
4 cups coconut milk and mix with 1/2 tsp salt/ 4 cawan santan
For the Fillings
1 coconut, grated/ 1 biji kelapa parut
3/4 cup palm sugar/ 3/4 cawan gula merah
1/4 cup sugar/ 1/4 cawan gula
5 tbsp water/5 sdb air
1 pc of pandan leaf or screwpine leaf/ 1 helai pandan diikat
banana leaves 6 x 6 / daun pisang 6 x 6
To prepare filling
Dissolve sugars. Add grated coconut and pandan leaf. Cook till the mixture is soft and dry. Remove from heat and let it cool./Cairkan gula macam membuat sirap, masukkan kelapa parut. Kacau dan padamkan api. Biarkan sebentar
METHOD
Prepare steamer by boiling water. Wash the glutinous rice and strain. Place tray on steamer and steam for 5 minutes. Add enough coconut milk to cover the rice. Mix well. Steam again till it is cooked for about 20-25 minutes. Check from time to time and stir and add coconut milk if necessary./ Didihkan kukusan. Basuhkan pulut, toskan, letakkan ke dalam dulang pengukus dan kukus selama 5 minit, masukan santan separa pulut, kacau rata dan kukus lagi 20-25 minit. Periksa pulut dari masa ke se masa. Tambahkan santan bila perl.,
Soften banana leaves by dipping into boiling water for at least 30sec. Put cooked glutinous rice on banana leaf. Add 1 tsp filling on top of the rice. Fold both ends of the leaf over the kuih, ensure that the top is slightly open to show a bit of the filling. Fold both ends downwards. When all the mixture is used up, serve on a plate./ Layurkan daun pisang, masukkan pulut yang dimasak tadi ke dalam daun pisang dan letakkan inti kelapa. Balut seperti balutan Nasi Lemak. Hidang

Pulut Inti ini biasanya menjadi favorite orang-orang lama. Sedap dimakan diwaktu pagi. Saya jarang membuatnya. Kerana kurang diminati oleh anak-anak, kalau saya berhajat, saya beli aje diluar. Pulut ini memang sedap, lemak dan manis. Intinya kalau lebih boleh digunakan untuk membuat kuih dadar. So kalau nak buat inti biar lebih tak apa.
