Serimuka Gula Merah |
Serimuka Gula Merah, is an evergreen serimuka, made of glutinous rice and palm sugar. It's creamy and delicious. Popular among the Malays and the Chinese especially the Peranakan Nyonya.
INGREDIENTS
Bottom Layer
3 cups glutinous rice - soak / 3 cawan pulut - rendam
3 cups coconut milk/ 3 cawan santan
pinch of salt/ secubit garam
1 screwpine leaf/ 1 helai daun pandan
METHOD
- Prepare the steamer. Combine glutinous rice, salt and coconut in a square or round cake pan. Mix well. Place the screwpine/pandan leaves on top of the rice and steam over rapidly boiling water for about 30–35 minutes or until cooked through./ Panaskan kukusan. Campurkan semua bahan dalam loyang 7". Campurkan dan letakkan daun pandan dan kukus selama 30-35 minit.
- Discard pandan leaves. Fluff up the rice, and then press rice firmly down with a banana leaf or aluminum foil until it is compact. Return it to the steamer./ Keluarkan daun pandan. Kacau-kacaukan pulut dan tekankan dengan daun pisang sehingga mampat dan kukus semula.
3 eggs / 3 biji telor
3 cups coconut milk/ 3 cawan santan
3/4 cup flour / 3/4 cawan tepung gandum
1/4 cup cornflour / 1/4 cawan tepung jagung
3/4 cup palm sugar/ 3/4 cawan gula merah
1/4 cup sugar / 1/4 cawan gula merah
- Blend all ingredients until well combined.Strain the batter to remove any lumps.Scratch the surface of the steam rice lightly with a fork. Pour in the palm sugar layer of the batter on top of the rice. Steam over a low heat for 20 minutes or until set./ Blend semua bahan. /Tapis dan tuang ke atas lapisan pulut. Sebelum dituang, lorek-lorekan bahagian pulut dengan garfu. Kukus selama 20 minit.
- Set it aside to cool completely before cutting into serving pieces./ Biarkan betul-betul sejuk baru dipotong
