Lepat Labu or Pumpkin Parcels Kuih are easy to do with less ingredients, pumpkin, sugar and grated coconut. The only set back is to get banana leaf. The first time I made it, I thought I might not get good response from my children, but surprisingly they love it. Creamy and soft texture....goes well with kopi O and perfect tea menu.
INGREDIENTS
1/2 pumpkin steam and mashed/ 1/2 biji labu kukus dan lenyek
3/4 cup sugar/ 3/4 cawan gula
1 1/2 cup flour / 1 1/2 cawan tepung gandum
pinch of salt/ secubit garam
2 cups grated coconut/ 2 cawan kelapa parut
2 cups grated coconut/ 2 cawan kelapa parut
banana leaves 7 x 5 / daun pisang di potong 7 x 5
METHOD
Antara banyak-banyak lepat, lepat inilah yang menjadi kegemaran saya. Rasanya lemak-lemak manis. Amat sesuai dijadikan jamuan petang. Kena pula dengan Kopi O.... perghh.....
- Cut the leaves into 7 x 5 cm squares . Heat up some water in a steamer. Leave for 5 mins,no need to be boiling point, put in all the banana leaves. Leave for 2 minutes. Then drain and wipe./ Layurkan daun dan potong 7 x 5.
- Heat up steamer/Panaskan kukusan
- Combine all ingredients except the grated coconut./ Campur semua adunan kecuali kelapa parut.
- Scoop and put grated coconut as filling. Wrap and steam. / Masukkan lebih kurang 2sdb adunan ke atas daun pisang. Letakan kelapa parut di tengah-tengah sebagai inti. Bungkus seperti membuat lepat pisang.
- Steam for about 15 - 20 minutes./ Kukus selama 15 - 20 minit.
- Serve while hot/Hidang panas-panas.
