SWEET SOUR FISH FILLET WITH RICE




Sweet Sour Fish Fillet is one of a popular dish in most Chinese Restuarant. A simple and healthy dish serve with white rice. You can either marinade the fish or coat the fish fillet with batter. All depending on your preference and also you can use pineapple to get the sweet and sour taste. In this recipe I added some chili paste and bird's eye's chili to make it a bit spicy.

Sweet Sour Fish Fillet

2 packet  fish fillets, such as cod, haddock, or sea bass, or dory – I used Dory\

Marinade:
1 teaspoon salt
1 tablespoon cornstarch
1 egg white

Sauce:
1 cup chicken broth
7 bird’s eyes chilie thinly slice
2 tbsp chilie paste
1 tablespoon light soy sauce
2 tablespoons tomato paste
3 tablespoons rice vinegar, or red or white wine
3 tablespoons granulated sugar
1 tablespoon cornstarch mixed with 2 tablespoons water

Other:
1 cup bell pepper cubed – Mix red yellow and green
1 onion cut into ring
1 tablespoon ginger, finely chopped
3 garlic, chopped 
2 - 4 cups oil for deep-frying
Preparation:

Rinse the fish fillets and pat dry. Cut into 2-inch squares. Add the fish to the marinade ingredients, using your fingers to mix in the ingredients and adding the cornstarch last. Marinate the fish for 15 minutes.

While the fish is marinating, prepare the sauce and vegetables. In a small bowl, mix together the chicken broth, soy sauce, rice vinegar, tomato paste and sugar. In a separate small bowl, dissolve the cornstarch in the water.

Heat the oil to between 360 and 370 degrees Fahrenheit. Add the marinated fish cubes. Deep-fry until they are golden brown. Remove and drain on paper towels.

Remove all but 2 tablespoons oil from the wok. Add the ginger, garlic and garlic and stir-fry until aromatic (about 30 seconds).  Add in chili paste and bird's eyes chili. Stir fry for a minute and add the red bell peppers and onion

Push the vegetables up to the sides of the wok and add the sauce in the middle. Bring to a boil. Add the cornstarch and water mixture, stirring to thicken. Serve the fish on a platter, covered with the sweet and sour sauce and vegetables.
Menu mudah..fillet ikan masak masam-manis. Menu ini memang popular lah di restuarant-restuarant Cina. Anak-anak memang menggemari masakan jenis ini. Tetapi kalau untuk memasak untuk anak-anak tak payahlah masukkan pes cili dan cili padi. Memadai dengan sos yang ada. Mengikut cita rasa masing-masing sayuranya pula boleh juga dimasukkan kacang peas. Saya menggunakan cili benggala  tiga war na. Untuk ikanya juga anda mempunyai pilihan sama ada hendak memerapkan dahulu atau digoreng tepung. Semuanya bergantung kepada pilihan dan citarasa masing-masing. Resipi mudah, ringkas dan sedap.
