COCONUT TARTS



I made these on request of my FB friend, she said she ate in Penang..and she asked whether I know the recipe. I haven't make these tarts before..but I promised her I'll check out and inform her. I goggled the recipe and found this in http://www.mykitchensnippets.com/2010/07/coconut-tarts.html, run through the recipe and I happened to have all the ingredients except the fresh coconut, run to get some and bake a batch of these awesome tarts. Crispy crusts and creamy filling..that's how I described these tarts. Popular among Penangnites especially the Chinese and the factory that introduced tarts are still around..OMG their tarts are really awesome and the best part of it the filling was made in such a way that you can see the swirls of coconut filling. I don't know how they made it but I made mine simple. Perfect for afternoon tea.


Pastry:
280 gram flour /280 g tepung
50 gram sugar / 50 g gula - I used icing sugar

1 egg / 1 biji telur
150 gram butter, chilled and cut into cubes / 150 g butter sejuk didadukan

2 tbsp cornstarch / 2 sdb tepung jagung
½ tsp salt / 1/2 tsp salts

Filling:
200 gram fresh grated coconut / 200 g kelapu parut- kelapa putih
80 gram melted butter / 80 g mentega cair
90 gram sugar / 90 g gula
2 eggs / 2 biji telur
2 tbsp condensed milk / 2 sdn susu  pekat
1 tbsp custard powder or cornstarch
  / 1 sdb tepung custard  atau tepung jagung


1. Sift flour and cornstarch together into a mixing bowl. Add in the sugar and salt. Mix well. Rub in the cold butter until the mixture resembles coarse breadcrumbs. / Ayak tepung, tepung jagung dalam satu bekas. masukkan garam kacau rata. masukkan ketulan mentega dan gaul rata sehingga menjadi serbuk roti.
2. Add in egg. Mix until the pastry begins to form large dough. Press together gently with your fingers to form the pastry into a ball. / Masukkan telur dan gaul rata sehingga adunan membentuk seperti doh pastri. Tekan dengan jari sehingga membentuk seperti bola
3. Chill pastry dough for about 30 minutes. / Sejukkan dalam fridge selama 30 minit


4. In a bowl, mix all ingredients of filling. Set aside./ Dalam sebuah mangkok besar satukan semua bahan inti dan letak sebelah
5. Press pastry evenly into tart mould. Trim the edges to remove excessive dough. Fill tarts with fillings / Keluarkan adunan dari fridge canai dan terap dalam acuan. Kemaskan dengan menggunakan pisau dan ratakan. Masukkan inti.
6. Bake in a preheated oven at 350 degree F oven for 30-35 minutes until lightly brown./ Panaskan oven dan bakar tarts selama 30-35 minutes.
7. Leave the tarts in moulds for 5 minutes before/ Sejukkan sebelum dikeluarkan dari acuan

Saya membuat tarts ini adalah atas permintaan teman FB saya Norliza Hj Keling. kata Norliza dia suka sangat tarts ni dan bertanya samada saya ada resipinya..tetapi saya selalu beli aje di bakeries..tapi oleh kerana Norliza sudah bertanya jadi saya search goggle dan jumpa resipi ini di http://www.mykitchensnippets.com/2010/07/coconut-tarts.html, saya buat satu adunan untuk test. memang sedap resipi Mykitchensnippets..kulitnya ranggup dan intinya lemak. Resipi ini agak kurang manis..saya lebih ditambahkan sedikit gula pada inti untuk menaikkan lagi lemak pada intinya. Sajian yang sesuai buat minum petang
