COFFEE APPLE CAKE / KEK KOPI EPAL



I saw this in my friend's blog, MUNATYCOOKING from UAE...I felt in love with it when Muna said that this cake is a winner, which has coffee,fruit and a dessert all in one. A Coffee cake which really has coffee in it. The recipe calls for pecan but I substitute it with roasted walnut..OMG it was really awesome..crunchy  from the outside, soft and moist inside. The coffee and apple really add flavour to the cake. Perfect for tea. Trust me ..it's scrumptious and easy to prepare. If you can't finish your apple at home try this....you will never regret. Ingredients:
 1/2 cup butter / 1/2 cawan mentega
 1/2 cup sugar / 1/2 cawan gula
 2 eggs / 2 biji telur
 1 cup flour / 1 cawan  tepung
 1/2 teaspoon vanilla / 1/2 sdt vanila
 1 teaspoon baking powder / 1 sdt baking powder
 Half an apple cut in small cubes / 1/2 biji epal dipotong dadu
 1/4 cup pecans (optional) / 1/4 cawan kacang peacan - saya guna walnut (ini pilihan tak ada pun tak apa
 1/2 teaspoon cinnamon powder (optional) / 1/2 sdt serbuk kayu manis
 Pinch of salt / secubit garam

 1 1/2 tablespoon instant coffee powder melted in 3-tablespoons of water. / 1 1/2 sdb kopi segera dibancuh bersama 3 sdb air panas - Saya guna Nescafe

1- Beat butter with sugar until lighter in color and creamy in texture./ Pukul mentega dan gula sehingga gebu
2- Add the egg with vanilla and keep on beating for 3 minutes. / Masukkan telur dan vanilla dan pukul lagi
3- Add the coffee and keep on beating still. /Masukkan kopi dan pukul lagi
4- Mix flour with baking powder and salt and add it to previous mixture. Do not over beat, 15 seconds on very low speed are enough./ Masukkan bahan kering dn pukul lagi jangan terlalu lama sekejap aje
5- Pour the cake mixture in baking pan, add apple and pecans on top of the cake, sprinkle the cinnamon. / Masukkan adunan dalam acuan dan taburkan epal dan serbuk kayu manis
6- Place baking pan in preheated oven at 350F/180C/ gas mark 4 for 35 – 40 minutes./ Bakar pada suhu 180 c selama 35 - 40 minit atay sehingga masak dan kekuningan

     Coffee Apple Cake ini memang hebat..lebih-lebih lagi makan panas-panas....kena dengan secangkir coffee..perghhhh.. dunia ana yang punya..saya memang suka resipi dari sahabat saya Muna dari UAE..... Bahanya mudah..memang sentiasa ada dalam gerobok dapur dan kalau epal dalam fridge tu tergolek-golek tak ada yang nak makan buatlah kek ini pasti anda akan suka.

Thanks Muna it was soft and crunchy outside..really lot it while it was out from the oven...thanks ya and yesterday I treid your focacia bread and muffin..I PM u once I made the posting. Thanks once again
