A favourite dish in most Chinese and Thai Restaurant,the cashew nuts make this unique, I've added some chili paste to make it a bit hot and spicy. You can omit the chili and make it more like the Chinese Style. This dish serve best with hot rice and with other dish.
HOT AND SPICY CHICKEN CASHEW NUTS300 g. sliced chicken thigh
1/3 cup fried cashew nuts3 cloves garlic, minced5 - 7 dried chillies, chopped2 tbsp. chili paste1/2 cups water chestnuts, peel and boiled¼ cup Spring onion (cut into 1.5 inch pieces)½ cup of all purpose flour1 onion, cut 1/42 tbsp. vegetable oil.1 tbsp roasted chillie paste1 tbsp tomato sauce2 tbsp. oyster sauce1 tbsp. soy sauce1 tbsp sugar½ tsp saltPreparation:Heat the vegetable oil in a wok then put the dried chilies and fry until fragrant, set asidePut the all purpose flour and the chicken into the bowl and mix well.Heat the oil in a wok (use medium heat) then Stir-fry the chicken until light brown, set asideHeat the vegetable oil and put the garlic. Stir-fry over medium-high heat until fragrant (about ½ minute).Add in the chile paste and stir fry till fragrantPut the fried chicken (¹), onion and water chestnuts. Stir fry for a minute.Add remaining ingredients except the spring onion in the wok and season with roasted chillie paste, soy sauce, tomato sauce, oyster sauce, sesame oil, sugar and salt.Continue stir fry around 2 - 3 minutes. Use the low heat and cook for a while. Taste it.Place into a dish and garnish with spring onion.It is now ready to serve.
Sajian ini cukup popular di restaurant Thai mahupun restaurant Cina. Kacang gajus yang digoreng terlebih dahulu menjadikan sajian ini agak unique. Ada yang meletakkan cili kering dan ada juga yang meletakkan cili Benggala. Semua bergantung kepada citarasa masing-masing. Untuk resipi ini saya letakkan sedikit cili pes untuk menjadikan lebih pedas. Memang sedap dan sesuai dijadikan lauk dihidang bersama sajian lain.
