INDIVIDUAL CHEESE CAKE / KEK KEJU MINI


I am happy that I found this recipe. I have always wanted to make cheese cake..but always wonder whether I can finish the whole cake and always worry that it would not turn out well. I've heard a lot of cheese cake issues and that always put me off however this recipe really rescue me...not that it is simple, it's just enough to cater for your sudden craving, less baking time and  it fit the bill as they take only about 20 minutes to bake and need just a few hours to chill. They are baked in muffin cups and are excellent plain, but I think cheesecake always tastes better with fruit, so serve with either fresh berries or a strawberry or raspberry sauce.

These Individual Cheesecakes are set in a graham cracker crust and have a creamy smooth New York style cheesecake filling. The most important thing to remember when making a cheesecake is to have all the ingredients at room temperature. Beat the cream cheese just until it is creamy and smooth (no lumps) and then add the sugar. Make sure you scrape down the bowl often to remove any lumps and beat the cheesecake batter at low speed to reduce the amount of air incorporated into the batter. I love to add a little grated lemon zest to the batter which seems to perk up all the flavors. 


Individual Cheese Cake

We use a 20ml tablespoon and 250ml measuring cup for all of our recipes.

Base
150g Nice biscuits / 150 g biskut apa-apa jenis pun boleh biasanya guna biskut marie
70g butter, melted (the amount you need may vary, depending on the type of biscuits you use)  / 70 g mentega cair (bergantung kepada jenis biskut yang digunakan)

Filling
250g cream cheese, softened / 250 g krim cheese
75g (1/3 cup) caster sugar (superfine sugar) / 75 g atau 1/3 cawan gula caster
1 large egg / 1 biji telur
20ml (1 tablespoon) lemon juice / 1 sdb jus lemon
100ml (5 tablespoons) thickened cream (about 35 percent fat) / 100 ml atau 5 sdb krim pekat (boleh juga guna krim masam atau yogurt)

Preheat oven to 180 degrees Celsius (160 degrees Celsius fan-forced). / Panaskan oven - 180 C

Line 10 holes of a muffin pan (1/3 cup capacity holes) with patty/muffin cases. We use paper-lined foil cases that measure 8cm across the top and 5cm across the base. / Alaskan kertas pada tin muffin

Finely crush biscuits in a food processor or blender. If you are using a food processor, you can add the melted butter to the biscuit crumbs and process until well combined. If you are using a blender, it is probably easier to tip the biscuit crumbs into a bowl and then stir in the butter. © exclusivelyfood.com.au / Hancurkan biskut menggunakan processor atau blender dan satukan dengan mentega cair

Divide biscuit mixture evenly among cases (about one firmly packed tablespoon of biscuit mixture per case). Firmly press mixture down with the back of a teaspoon until smooth. Set bases aside while making the filling. / Bahagi sama rata dan susun dalam acuan muffin sambil ditekan

Beat cream cheese and caster sugar in an electric mixer or food processor. Stop the machine a couple of times to scrape down the sides and base of the bowl. When the mixture is completely smooth and creamy, add egg and beat until combined. Add lemon juice and cream and beat until well combined. Divide mixture evenly among cases. / Pukul krim cheese dan gula sehingga lembut dan nampak creamy. Masukkan telur dan pukul lagi sehingga sebati. Masukkan jus lemon dan krim pukul rata. Bahagi adunan sama rata dan masukkan ke dalam acuan muffin tadi

Bake cheesecakes for 20 minutes. Remove from oven and allow to cool in pan for 30 minutes. / Bakar selama 20 minit. Keluarkan dari oven dan sejukkan. Hias dengan buah-buahan kegemaran anda.

Cheesecake memang sedap..tetapi setiap kali bila rasa teringin hendak membuatnya saya selalu dibayangi dengan rasa takut jika ia akan merekah ditengah dan lemas dengan masa yang diambil untuk membakarnya...agak lama. Alhamdulillah saya sudah jumpa penyelamatnya....Cheese cake mini, yang mudah, ringkas, tidak meragam dan bahagiannya yang cukup-cukup, maknaya kita tidak perlu risau untuk menghabiskanya..bak kata orang sekarang adunanya ngam-ngam aje. Jika anda ingin membuatnya pastikan semua bahan anda berada pada suhu bilik, pukul krim keju sehingga creamy dan tidak bergentel...ini penting supaya ia tidak memerangkap udara dan selalu hendak kaupkan adunan dan pastikan speed yang digunakan untuk memukul krim berada pada speed yang rendah.

Cheesecake sebegini sesuai disajikan bersama buah-buahan terutama berries, so hiasa dengan berries pilihan anda atau anda boleh juga menggunakan sos seperti blueberry sos atau raspberry sos.

Salam kak paty! lama dah kita tak dtg sini sejak2 ni, bz betul kita :D rajin akak nak buat comel2 gini kalau kita masuk terus dlm loyang :D tapi paling best kalau kecik2 ni mkn 2 3 kali ngap abis :D
