SWEET SOUR CHICKEN / AYAM MASAM MANIS


The authentic sweet sour chicken used boneless chicken but mine, I used 1 whole chicken cut into 16 pieces. My version of sweet and sour is a mixture of the Chinese and Malay. I added some fresh chili to make it a little bit hot. I also tossed a generous amount of pineapple, green peppers, tomatoes, and onions into this dish. It's delicious and of course goes well with hot steam rice.

Sweet and Sour Chicken Recipe

INGREDIENTS

  • 1 whole chicken cut int 16 pieces.
  • 2 tbsp turmeric powder
  • 1 tbsp salts
  • Sufficient oil for deep frying
Marinade the chicken with turmeric powder and salts. Deep fried chicken till brown. Remove, drain and set aside. 
For the Sauce
  • 10 fresh red chilies - blend to form paste
  • 5 cloves garlic
  • 2 " ginger
Blend all ingredients to form wet paste

For Seasoning
  • 1/4 cup juice from the canned pineapple
  • 1/4 cup white vinegar
  • 1/4 cup ketchup
  • 1/2 teaspoon kosher salt (1/4 teaspoon table salt)
  • 2-3 tablespoons brown sugar
  • 1 tablespoon + 1 teaspoon cooking oil 
  • 1 tbsp of cornstarch ( mix with1/2 cup of water)
For Garnishing
  • 1 10-ounce can pineapple chunks (reserve juice)
  • 1 red bell pepper, cut into 1 inch chunks
  • 1 yellow bell pepper, cut into 1 inch
  • 1 onion cut into rings

PREPARATIONS

  1. In the meantime, whisk together the pineapple juice, vinegar, ketchup, salt, and brown sugar.
  2. Heat a large frying pan or wok and fry chicken till brown.
  3. In anther pan heat up 3 tbsp oil. Fry the chili paste till fragrant. Add the seasoning.Add some water if necessary. Stir constantly. Add fried chicken and all the garnishing ingredients. Finally add in the cornstarch. Once thicken off heat and serve.

Biasanya masakan ini menggunakan isi ayam yang digoreng dengan tepung jagung dahulu. Tetapi untuk resipi ini saya menggunakan seekor yam yang dipotong 16, digoreng garam kunyit sehingga kekuningan. Untuk sosnya pula saya tambahkan cili merah, supaya masakan ini tidak terlalu muak. Biasalah tekak orang Melayu mesti hendakkan peda-pedas sedikit. Bahan-bahan lain seperti biasa saya masukkan cili benggala, hijau dan kuning serta juga nenas tin berserta airnya sekali. Menu ini adalah sajian masakan Cina yang amat digemari dan juga ianya sesuai sebagai sajian kanak-kanak. Biasanya kalau untuk sajian kanak-kanak cili merah itu tidak perlu dimasukkan.
