I love this pie and always have the thought that it was difficult to prepare until I found the step by step recipe my myhomecooking. net. It was wonderful and the process of making the pie was really interesting.
Try this you are sure to love it. You can use any fillings that you like. It's delicious with ice cream or cream.
For the pie crust - This recipe calls for
- 2 cups all purpose flour
- I teaspoon salt
- 1 tablespoon sugar
- 6 tablespoons butter
- 6 tablespoons shortening
- 6 to 8 tablespoons ice water
- Mix it all together with your hands until you have a crumbly texture. Click the picture to enlarge it - all the pictures can be enlarged.
- Add water to the pastry and mix it in with a knife. Then use your hands to mould the pastry mix into a ball (see picture). You can tell the mix is correct because the pastry ball will collect all the bits of pastry from the edge of the bowl leaving it almost clean!
- After half an hour, take the pastry from the fridge, and separate roughly two thirds of it
- Roll the pastry out with a rolling pin so that it is large enough to line the base and sides of the pie dish.
- Use several sprinklings of flour on the rolling pin and the surface used for rolling the pastry.
- First, lightly roll 50% or so of the flattened pastry over the rolling pin.
- Then trim off the excess pastry from the top. Do this with the 'blunt' side of a knife - the blunt side is far less likely to tear the pastry.
- Turn your oven on now so that it's pre-heated ready to cook later on. Heat settings are 220°C / 425°F.
For the apple pie filling you need:
- 5 Tart Peeled Apples
- 1 Cup Sugar
- 2 Tablespoons Flour
- 1/2 Teaspoon Cinnamon
- 1/4 Teaspoon Salt
- 1 Tablespoon Cider Vinegar
- 1 Tablespoon Lemon Juice
- Peel and slice your apples.
- Soak them in water with a tablespoon of lemon juice. This will prevent the first apples cut from turning a funky color.
- Soak them in water with a tablespoon of lemon juice. This will prevent the first apples cut from turning a funky color.
- Mix all spices and sugar. Drain water from the apples and mix with the spices.
- Once finished arrange the sliced apples on the pie crust. Make it three layers.
- Roll the remaining pie dough and cover the pie.
- Bake your pie at 400 degrees for 50-60 minutes
- For a glossy effect, brush a small portion of egg white on top of the crust .
