I used the layered kuih lapis recipe for this Talam Lapis Kacang Merah. A semi elastic version with red beans as one of the layer. Great for functions and evening tea.
Talam Lapis Kacang Merah.
Ingredient A
160g sugar
pinch of salt
450g water
6 blades pandan leaves
Ingredient B200g rice flour
100g tapioca flour
400g thick coconut milk
1 1/2 cup red beans (I used the can beans)
Green and Red coloring
Method:
- Put Ingredients B into a mixing bowl and mix well.
- Mix Ingredients A and bring to boil. Pour into Ingredients B and mix well, strain.
- Divide batter into 5 equal part, (3 green and 2 reds) and add some coloring according to your own choice.
- Add red beans into the green portions.
- Heat up a 7" round tray lined with banana leaves till hot.
- Pour in one portion of the mixture into the steaming tray and steam for 7 minutes.
- Pour in 2nd layer of mixture on top of the 1st layer. Repeat until the last layer, steam for 4 minutes. Open the steaming lid and continue steaming for another 5 minutes.
- Remove from heat. Leave to cool completely before cutting into pieces.
Resipi asal adalah untuk kuih lapis, 9 warna tetapi saya olah dengan mencapurkan lapisan hijau dengan kacang merah. Boleh juga digantikan dengan kacang hijau atau masukkan kacang hijau dalam lapisan merah.Kacang jangan diblend saya hiris nipis supaya boleh nampak kacang bila dipotong nanti.
