I made this by accident!!. My plan was to make Steam Seabass With Mango Kerabu. Bought all the Kerabu Mango ingredients and was really happy that I can have my Thai Food at home, but unfortunately I could'nt find any Seabass around. Quite unusual this fish is always everywhere in the supermarket!!!. Leaving me no choice since I had mentioned to my kids that I'm making Thai food...I bought slice white fish..Red Snapper. Red Snapper is best for grilling so my next step is to get the recipe for Grilled Fish...the Malaysia way...found in the net so here's go my Grilled Fish With Kerabu Mango.
To my surprise it turned out good..not that excellent as compared to Steam Seabass. Anyway if you are caught in such situation like me..then fusion your recipe..I called this mix and match recipe...
Of course if you had tasted Kerabu Mango and Malaysian Grilled Fish..then you know how awesome it was...tasty and yummly delicious.
Grilled Snapper With Kerabu Mango
Ingredients
500g , any white fish cut into 2cm-thick slices
1 tsp salt
1 heaped tsp
turmeric powder
Grind
10 dried
chilies, soaked
6 shallots
3 cloves
garlic
1cm ginger
1 1/2 cm
galangal
1cm turmeric
root
Seasoning
1/2 tsp
sugar
1/2 tsp salt
1/2 cup
thick coconut milk
1 stalk
lemon grass, crushed lightly for basting
Method
Rub fish
slices with turmeric powder and salt. Leave aside for 15 minutes.
Combine
ground ingredients with seasoning and bring to a low boil. Simmer until gravy
is thick.
Rub fish
slices with combined mixture and grill in an oven or pan-fry until cooked. Keep
basting occasionally until fish is cooked. Serve fish with mango kerabu.
MANGO KERABU
1 small
Green Mango - skinned and shredded
5 Shallots -
sliced finely
10 Cilipadi
- sliced finely
1/2 Cucumber
with soft centre removed - shredded
1/2 Carrot -
shredded
Seasoning
Ingredients
3 tbsp Lime
Juice
2 tbsp Sugar
1 tbsp Fish
Sauce
1 tbsp
Sesame Oil
Dash of
pepper
Garnishing
Ingredients
Coriander
Leaves
Mint Leaves
Directions
1. Combine
seasoning ingredients in a mixing bowl.
2. Stir in
all shredded ingredients.
3. Place
unto serving bowl and sprinkle garnishings.
4. Serve
with any seafood curry meals, fried chicken or grilled fish.
Ini resipi "kerna terpaksa"..hajat hati nak masak ala Thai dekat rumah..cadangnya buat Tom Yam Cendawan, Siakap Kukus Kerabu Mangga dan Kailan Ikan Masih...semua bahan dah cukup alaih--alih..main course punya bahan tak ada...Siakap tidak ada...Mana perginya..selalu berlambak-lambak di pasar dan TESCO...hari yang kita hendak pula tak ada...aduhai sudah janji dengan anak-anak dan tak naklah putuskan harapan dia orang jadi saya carilah apa aje ikan yang ada. Dapat ikan merah...biasa siakap saya kukus..ikan merah ini sedap buat sup dan kari...kurang yakin sedap untuk kukus saya buat ikan bakar..bakar cara Melayu...kerabu mangga tetap saya buat...saya gandingkan dua menu ini dalam satu..ha...ha...fusionkan keduanya...maka inilah dia Grilled Fish With Kerabu Mango....boleh tahan sedap juga,,manis-manis ikan bakar dan masam-masam kerabu mangga.
