HONEY WALNUT COOKIES



I am sure you all know by now of my not-so-secret-obsession with bakingbites.com !!!!, she really has some fantastic recipes out there. I love trying her pancakes, cupcakes, muffins and cookies. I can't seem to stay away from the her recipes. I really have yet being disappointed by one of her recipes !. This cookie recipe is one of it. This cookies use no egg and no butter.
Butter is substitute with vegetable oil, honey adds moisture to the cookies, it's fragrant and gives the cookies wonderful flavor while the walnut add crunchiness to the cookies. I love this cookie.


1 cup all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/4 cup brown sugar (pref. light)
1/4 cup vegetable oil
1/3 cup honey
1 tsp vanilla extract
1/3 cup chopped walnuts
  1. Preheat the oven to 350F and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt and sugar.
  3. In a small bowl, whisk together oil, honey and vanilla extract. Pour into flour mixture and stir until almost combined. Add the walnuts and stir until walnuts are well distributed in the cookie dough.
  4. Shape into 12 rounded balls (approx 1-inch balls) and place onto prepared baking sheet. It is easiest to shape this dough with your hands or with a small scoop.
  5. Bake for 10 minutes, until cookies are lightly browned around the edges.
  6. Cool on baking sheet for 2-3 minutes, then transfer to a wire rack to cool completely.

Resipi-resipinya mudah dan senang diikuti dan yang paling penting sedap. Cookies ini adalah keluaran terbaru dari sana cookies yang tidak menggunakan telur dan butter. Sebaliknya butter digantikan dengan minyak sayur. Cookies ini meletakan madu sebagai bahan pemanis, ini secara tidak langsung menyebabkan cookies ini agak lembap manakala walnut menjadikan cookies ini agak ranggup.
Saya akan cuti bersiaran selama seminggu kerana ada tugasan luar, jumpa lagi di minggu kedua Oktober.

M&M CHOCOLATE CHIPS COOKIES






This will bring a big smile to the little one.  Basic chocolate chip cookies with M&M candy. Its crispy at the edge and chewy in the middle. Perfect for Birthday party for the little one.

INGREDIENTS
2 cups + 2 tbsp flour / 12 + 2 sdb tepung
1/2 tsp baking soda / 1/2 sdt baking soda
1/4 tsp salts / 1/4  sdt garam
1 1/2 sticks (12 tablespoons) of salted butter, melted and cooled / 12 sdb mentega atau 3/4 cawan 
1 cup brown sugar / 1 cawan gula merah
1/2 cup sugar / 1/2 cawan gula pasir
1 egg + 1 egg yolk, at room temperature / 1 biji telur + 1 kuning telur
2 teaspoons vanilla extract / 2 tsp vanilla
1 cup chocolate chips / 1 cawan chocolate chips
1 cup mini m&m’s (or something else that you love) / 1 cawan M&M


Preheat oven to 325 degrees F.
Mix the flour and baking soda in a bowl and set aside. In another bowl, mix the butter and sugars until they are combined (and look like the first picture above). Add the egg, egg yolk, and vanilla and stir until mixed. Gradually add flour and mix until a dough forms – it will look crumbly at first, but it will come together. I even used my hands to help at one point. Fold in the m&m’s. /Satukan tepung dan soda. Ketepikan. Dalam mangkuk lain pukul mentega dengan gula sehingga kembang. Masukkan telur, vanilla dan kacau rata. Perlahan-lahan masukkan tepung sehingga terbentuk doh. Masukkan chocolate chips dan M&M

Drop dough by teaspoon onto cookie sheet. Slightly push a few candies on top of each dough ball with remaining candies / Sudukan doh dalam loyang pembakar lebih kurang 1 sdt. Tekan sedikit dan letakkan gula-gula yang selebihnya di atas doh.
Bake for 12-15 minutes (large cookies) or 8-12 minutes (small cookies) or until the edges are slightly brown. The centers should be soft and puffy. Do not over bake. Let cool completely  / Bakar selama 12-15 minit atau sehingga kekuningan.

Sunday Lunch - the Nasi Kandar Menu. We had Nasi Kandar for lunch today, but not at the Nasi Kandar Restuarant but at home. 

  • White Rice

Some context on Nasi Kandar from Wikipedia.:-

Nasi Kandar is a popular northern Malaysian dish, which originates from Penang. It is a meal of steamed rice which can be plain or mildly flavored, and served with a variety of curries and side dishes.
The word Nasi Kandar, came about from a time when nasi [rice] hawkers or vendors would kandar [balance] a pole on the shoulder with two huge containers of rice meals. The name has remained and today the word Nasi Kandar is seen on most Tamil Muslim or "Malaysian Mamak" restaurants and Indian-Muslim stall meals.
The rice for a nasi kandar dish is often placed in a wooden container about three feet high, giving it a distinctive aroma. The rice is accompanied by side dishes such as fried chicken, curried spleen, cubed beef, fish roe, fried prawns or fried squid. The vegetable dish would usually be brinjal (aubergine), okra (lady fingers or "bendi") or bitter gourd. A mixture of curry sauces is poured on the rice. This is called 'banjir' (flooding) and imparts a diverse taste to the rice.
Traditionally, nasi kandar is always served with its side dishes on a single plate. Nowadays, small melamine bowls are used for the side dishes. Nevertheless, the curry sauce mix is always poured directly onto the rice.
The famous Nasi Kandar dishes are curries, korma, fried chicken... and the list go on and on. One of my children favorite is the beef Nasi Kandar curry which is dark in color. I made that today accompanied with some pappadom, okra fish curry and aloo gobi.


INGREDIENT FOR BEEF NASI KANDAR / DAGING NASI KANDAR

1 kg beef cut into bite sizes / 1 kg daging lembu dipotong nipis
2 fresh tomatoes  quatered / 2 biji tomato biji dibelah 4
3 strig curry leaves / 3 tangkai daun kari
1 blade screwpine leaf / 1 helai daun pandan
1 cinnamon stick / 1 batang kulit kayu manis
2 anise star / 3 kuntum bunga lawang
5 cardamon pod / 5 biji buah pelaga
5 cloves / 5 biji bunga cengkeh
1/2 nutmeg / 1/2 sdt parutan buah pala
1 small can tomato puree / 1 tin kecil tomato puri
5 cups beef stock / 5 cawan stok daging
1 cup dark soya sauce / 1 cawan kicap pekat manis
5 onion thinly slice / 5 biji bawang besar dihiris nipis
1 packet beef curry powder / 1 paket rempah kari daging
2 strig coriander leaves / 2 tangkai daun ketumbar
1 ladle cooking oil / 1 senduk minyak masak

Ingredients to be blend / Bahan yang hendak dikisar halus
15 dried chilies / 15 tangkai cili kering
15 shallots / 15 biji bawang merah
7 cloves garlic / 7 ulas bawang putih
2" ginger / 2" halia
2 tbsp kas-kas / 2 sdb kas-kas

Blend all to form a wet paste / Blend semua bahan menjadi pes basah.

PREPARATIONS

  1. Fry slice onion till golden brown. Drain oil and set aside / Goreng bawang besar sehingga kekuningan dan gareng. Tos dan letak sebelah.
  2. Mix curry powder with blended ingredients / Satukan bahan blend dengan serbuk kari.
  3. Heat up oil and saute cinnamon stick, anise star, cardamon, cloves, screwpine leaf and curry leaves till fragrant / Panaskan minyak dan tumis empat sekawan, daun pandan dan daun kari sehingga naik baunya.
  4. Add in the curry powder with blended ingredients. Fry till oils surface / Masukkan bancuhan rempah kari dan bahan blend. Tumis sehingga naik minyak.
  5. Add beef and beef stock / Masukkan daging dan stok daging.
  6. Cook till beef tender / Masak sehingga daging empuk.
  7. Once tender and thicken add in the tomato puree and dark soy sauce /  Bila daging dah agak empuk dan kuah pekat sedikit masukkan tomato puri dan kicap.
  8. Add salts to taste / Masukkan garam secukup rasa.
  9. Finally add in fresh tomato, fried onions and coriander leaves / Akhir sekali masukkan tomato, bawang besar goreng dan daun ketumbar
  10. Simmer until oil surface / Renehkan sehingga naik minyaknya.

Hari ini di rumah semua anak-anak pulang kecuali Tyca yang sedang berhempas pulas mengulang kaji pelajaran untuk final semester  exam. Jadi ramilah di rumah. Anak-anak minta menu Nasi Kandar. Saya buat Daging Masak Hitam Nasi Kandar, Kari Ikan Bendi, Alo Gobi dan Pappadom.

COCONUT PANCAKE


In Thailand coconut pancakes "Knoom krok "are a common street food and I'll enjoy them whenever I'm there. These pancake are cook in a special pan since I don't have the pan I used the normal pancake method.  I love thick and fluffy coconut pancake. This recipe combine both coconut milk and desiccated coconut. Perfect for lazy Sunday Weekend breakfast - ENJOY



Ingredients 


  • 150g (1 cup) self-raising flour
  • 45g (1/2 cup) desiccated coconut
  • 2 tbs brown sugar
  • 250ml (1 cup) coconut milk
  • 2 eggs, lightly whisked
  • Melted butter, to grease
  • 20g butter
  • Toasted flaked coconut
  • White chocolate chips

Method

  1. Preheat oven to 100°C. Combine the flour, coconut and sugar in a bowl and make a well in the centre. Whisk together the coconut milk and egg in a jug. Gradually add the egg mixture to the flour mixture, whisking constantly until smooth. Cover and set aside for 20 minutes to rest.
  2. Brush a large non-stick frying pan with a little of the melted butter to grease and heat over medium heat. Pour two 60ml (1/4-cup) quantities of batter into the pan, allowing room for spreading. Cook for 1 1/2 minutes or until bubbles appear on the surface and pancakes are golden underneath. Turn and cook for a further 1 minute or until golden. Transfer to a plate and cover with foil. Place in oven to keep warm. Repeat, in 3 more batches, with remaining melted butter and batter, reheating the pan between batches.

  3. Divide the pancakes among serving plates. Sprinkle with flaked coconut and serve with white chocolate chips.

Pancake kelapa ini cukup terkenal di Thailand. Dimasak menggunakan acuan khas, tapi saya cuma gunakan metod pancake biasa aje. Lemak sebab menggunakan santan dan kelapa parut. Kalau hendakkan impak yang lebih sedak boleh dibuat sos kelapa. Saya cuma gunakan maple sirap biasanya. Kalau belum memikirkan apa yang hendak dibuat di pagi minggu ini cubalah respi Knaom Krok - Pancake Kelapa Thai.

ALMOND CHOCOLATE COOKIES


I love the chocolate flavor and texture of these cookies and the slices almond made the cookies more flavorful. I got this easy recipe from Hershey's. Try this !!!

Ingredients

  • 1 cup (2 sticks) butter or margarine, softened
  • 1 cup sugar
  • egg
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup HERSHEY'S Cocoa
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 cup HERSHEY'S Mini Chips Semi-Sweet Chocolate
  • Additional sugar
  • Slivered blanched almonds

Directions

  1. Beat butter and 1 cup sugar in large bowl until fluffy. Add egg, almond extract and vanilla; beat well. Combine flour, cocoa, baking powder, baking soda and salt; gradually add to butter mixture, beating to form smooth dough. Stir in small chocolate chips. If necessary, refrigerate dough about 1 hour or until firm enough to handle. 

  2. Heat oven to 350°F. Shape dough into 1-1/8-inch balls; roll in sugar. Place about 2 inches apart on ungreased cookie sheet. Place three slivered almonds on top of each ball; press slightly. 

  3. Bake 9 to 10 minutes or until set. Cool slightly. Remove from cookie sheet to wire rack. Cool completely. About 3-1/2 dozen cookies.

Chocolate cookies yang mudah dibuat. Kepada yang sukakan sesuatu yang berchocolate pasti suka cookies ini. Hirisan badam menambahkan kelazatan pada cookies ini. Resipi diambil dari HERSHEY'S.
