BLACK PEPPER CHICKEN/ AYAM GORENG LADA HITAM


I love this dish, it always remind me of my confinement days. My late mom used to cook anything with black pepper to heat up the blood circulation. It's simply delicious....simple..yet satisfying. You don't have to be on confinement to eat this. It's so good that you can make it as your normal meal. Chicken, shrimps, squids and crabs are good choices for this black pepper recipe. It's supposed to be dry but if you prefer gravy then you can add some chicken stocks.



Black Pepper Chicken Recipe

Ingredients:

1 whole chicken cut into 16 pieces /  1 ekor ayam dibelah 16 ketul
1/2 tbsp turmeric powder / 1/2 sdb serbuk kunyit
1 tsp salts / 1 sdt garam

Rub turmeric and salats over chicken. Coat the whole chicken well leave a side for 15 minutes deep free till cook or golden brown , removed drain oil and set aside. / Gaul kunyit dan garam pada ayam sehingga rata dan goreng sehingga ayam masak atau gareng kekuning, angkat dan letak sebelah.

Garnishing / Bahan untuk Taburan
1 onion into ring /1 biji bawang besar dipotong bulat
1 green bell pepper (cut into thin strips) / 1 biji cili benggala dihiris memanjang
1 stalk celery cut into strips 1" length / 1 batang celerey potong memanjang

Ingredients to be pounded
3 clove garlic / 3 ulas bawang putih
1/2" ginger / 1/2 halia

Pound all ingredients into fine paste / Tumbuk semua bahan sehingga halus

Seasoning
2 tablespoons soy sauce (use 1 tablespoon to marinate the chicken)/ 2 sdb kicap cair
3 tbsp freshly milled black pepper / 3 sdb lada hitam yang dikisar
1 teaspoon Maggi seasoning / 1 sdt perisa Maggi
1/2 cup water / 1/2 cawan air
2 tablespoons oil / 2 sdb minyak masak

Method:
  
Heat up a wok and add cooking oil. When the cooking oil is hot, add the pounded ingredients and quickly stir-fry until aromatic and follow by the bell pepper and black pepper. Stir-fry for 1 minute and add in the chicken. Continue to stir-fry until the chicken is cooked. Add in soy sauce, Maggi sauce, water, and continue to stir-fry until the gravy thickens Dish out and serve hot./ Panaskan minyak dan tumiskan bahan yang ditumbuk sehingga harum dan gareng. Finally add in the onion and slice celery. masukkan cili benggala dan lada hitam,  biarkan selama 1minit. kemudian masukkan ayam yang digoreng tadi. Gaul rata, masukkan air, soy sos, perisa maggi dan gaul rata dan masak sehingga kuah pekat sedikit. Akhir sekali masukkan bawang besar dan daun celery. Siap dihdang

Sajian sebegini selalu mengingatkan saya semasa dalam pantang. Lada hitam adalah amalan yang sesuai masa pantang untuk memanaskan badan selepas bersalin. Resipi ini kini bukan lagi menjadi sajian masa pantangmalah dikebanyakan restaurant Cina banyak resipi lada hitam ini. Sesuai untuk ayam, udang, daging, ketam, dan sotong. Membuatnya mudah dan ianya merupakan sajian yang menyelerakan dan sesuai makan bersama nasi panas.
