VANILLA PEAR ALMOND CAKE


Kek  yang menarik juga sedap. Buah pear diletak sebiji-sebiji didalam kek. Saya dapatkan resipinya dari Australia Woman Weekly Magazine. Satu kelainan dan sesuai buat sajian petang atau sebagai pencuci mulut...Menggunakan sebuk badam, badam cincang dan hirisan chocolate. Sedap makan panas-panas ni.


Ingredients
8 small corella pears (800g)/ 8 biji buah pear dibuang kulitnya
1 vanilla bean / 1 vanilla bean...saya guna vanila biasa aje
2½ cups (625ml) water / 2 1/2 cawan air
1 cup (220g) caster sugar / 1 cawan gula
1 strip lemon rind / parutan lemon
125g butter, chopped / 125 g mentega ketul dipotong kecil
¾ cup (165g) caster sugar, extra / 3/4 cawan gula caster
3 eggs / 3 biji telur
2/3 cup (160g) sour cream / 2/3 cawan krim masam boleh aje guna yogurt
2/3 cup (100g) plain flour / 2/3 cawan tepung gandum
2/3 cup (100g) self-raising flour / 2/3 cawan tepung naik sendiri
¼ cup (40g) roasted almonds, chopped finely / 1/4 cawan badam cincang
40g dark eating chocolate, chopped finely / 40 g chocolate dicincang
½ cup (60g) almond meal / 1/2 cawan serbuk badam

METHOD

Peel pears, leaving stems intact.

Split vanilla bean in half lengthways; scrape out seeds. Combine vanilla bean, seeds, the water, sugar and rind in small saucepan. Stir over heat until the sugar is dissolved.

Add pears; simmer, covered, 20 minutes or until pears are almost tender. Remove pears from syrup. Boil syrup, uncovered, until reduced to 1 cup (250ml); cool. Trim bases of pears to sit flat.

Preheat oven to 160°C/140°C fan-forced. Grease 26cm springform pan; line base with baking paper. Insert base of springform pan upside down to make the cake easier to remove.

Beat butter and extra sugar in small bowl with electric mixer until smooth. Add eggs, one at a time, beating until just combined. Add cream; beat until just combined. Stir in 2 tablespoons of the syrup. Transfer mixture to large bowl. Stir in sifted flours, nuts, chocolate and meal.

Spread mixture into pan; arrange pears around pan edge, gently pushing to the bottom of pan. Bake about 50 minutes. Remove ring from pan.

Serve cake warm or cool with remaining 

  1. Mula-mula siapkan sirap pear dulu..1 cawan air bersama  2 1/2 cawan gula, vanila dan hirisan kulit lemon dimasak buat macam air gula. masukkan pear dan tutup..biar selama 20 minitsehingga pear lembut. keluarkan pear dan terus masak air gula sehingga pekat atau sehingga setengah dari yang asal.
  2. Panaskan oven pada  160 darjah..oleskan acuan 26 cm..spring form.
  3. Pukul mentega dengan baki gula 3/4 cawan tu sehingga kembang. masukkan telur sebiji demi sebiji dan pukul sehingga sebati, Masukkan krim pukul lagi. Masukkan 2 sdb air sirap yang dimasak tadi.
  4. Alihkan adunan ke dalam mangkok yangbesar, masukkan tepung, badan hiris, cokolat hiris dan serbuk badam. Gaul rata.
  5. Masukan adunan ke dalam acuan dan susun buah pear tadi. bakar selama 50 minit.
  6. Sejukkan dan hidang bersama baki sirap pear tadi
