BROCCOLI, TOFU AND SHRIMPS


This is my favourite. If possible "No Sharing" !!! I can finish the whole plate. I really...really love this. This is an adaption of Beef Broccoli Chinese Style with Oyster Sauce. Instead of beef I used tofu quartered and deep fry. I substituted beef with shrimps. That's all I had in the fridge. It end up Fantastico.....!!!!love this.

You can add color to your plate using other options such as carrot, scallop or even shitake mushroom. The Chinese are really creative in making this dish colorful.

To retain the quality of the broccoli I would suggest that you steam the broccoli

INGREDIENTS

  • 1 bunch of broccoli / 1 buku brokoli
  • 2 tofu - quartered and deep fried / 2 keping tofu dibelah empat dan goreng kekuningan
  • 250 gm medium size shrimps shelled and devined / 250 gm udang sederhana besar bersihkan dan buang kulit setengah
For The Sauce and Seasoning

5 garlics chopped / 5 ulas bawang putih dicincang
2 tbsp oyster sauce /2 sdb sos tiram
1 tbsp light soy sauce / 1 sdb kicap cair
1 dash of white peppercorns / sedikit lada  sulah.
1/2 cup chicken stock / 1/2 cawan stok ayam
 1/2 tbsp corn flour mix with 1/2 cup water / 1/2 sdb tepung jagung campur dengan 1/2 cawan air
2 tbsp vegetables oil / 2 sdb minyak sayur
1 tsp sesame oil / 1 sdt minyak bijan
    PREPARATION
1 Rinse out well your broccoli, and break into large, bite-sized florets. Cut off the stem and peel off the thick skin around the stem. Quarter or halve the stem lengthwise.
2 Bring 3/4 to 1 inch of water to a boil in a saucepan with a steamer. (Note that is you don't have a steamer, you can simply put the broccoli directly into an inch of boiling water.) Add the broccoli to the steamer and cover; reduce heat to medium and let cook for 5-6 minutes. The broccoli is done when you can pierce it with a fork. But be careful not to overcook the broccoli. As soon as it is pierce-able, remove from heat, place in serving dish.
3 Arrange on the plate.
4. Heat up oil fry the shrimps till it change the color. Add in garlic and stir fry. Add in the seasoning and thicken the sauce with the mixture of cornflour and water. Pour sauce on the arranged vegetables.

Yang ini kalau boleh saya tidak mahu kongsi....memang kegemaran saya. Anak-anak kalau makan, mereka lebih gemar kaup udang dan sosnya. Resipi ini adalah adaptasi dari Beef Brokoli...biasanya di Restuarant Cina, bahan utamanya adalah daging yang dihiris nipis, tapi untuk resipi ini saya gantikan daging dengan udang. Kebetulan ada tofu tidak tahu hendak buat apa, saya goreng dan aturkan ketas pinggan sayur.

Untuk mengekalkan khasiat sayur,sebaik-baiknya brokoli ini dikukus. Dan untuk menambahkan keceriaan pada hidangan oleh dipelbagaikan dengan menggunakan loak merah atau cendawan hitam. Saya cuma capai apa yang ada sahaja.  Sedap makan dengan nasi panas dan jika menu anda adalah Chinese, maka sajian sayur ini cukup mantap.
