For those who prefer mild fried rice, this recipe suit you. It's a Chinese Fried Rice With salted fish. For this recipe I used "Ikan Kurau"- white snapper salted fish. It's easy, simple, cheap one dish meal for dinner or even breakfast.
INGREDIENTS
4 cups overnight rice/ 4 cawan nasi semalam
1 tablespoon fish sauce / 1 sdt sos ikan
1 tablespoon soy sauce / 1 sdt kicap cair
1/8 tablespoon salt / 1/8 sdt garam
3 dashes white pepper powder / lada sulah
1 skinless and boneless chicken breast/ isi ayam 1/2 cawan
1/2 cup baby shrimp / 1/2 cawan udang hidup - kecil
2 tablespoons cooking oil / 2 sdb minyak masak
2 cloves garlic (finely chopped) / 2 ulas bawang putih dicincang
2 eggs (light beaten) / 2 biji telur dipukul
1 small piece of salted fish (diced into small pieces) / Ikan masin dipotong kecil dan digoreng
1 tablespoon fish sauce / 1 sdt sos ikan
1 tablespoon soy sauce / 1 sdt kicap cair
1/8 tablespoon salt / 1/8 sdt garam

PREPARATION
- Heat up a wok with two tablespoons of oil. Add salted fish and fry until aromatic, set aside. Using the same oil, saute the garlic until aromatic. Add in chicken, baby shrimp, stir fry until they are half cooked. Season with salt and continue to stir-fry until they are 80% cooked. Add in the overnight rice and stir well with the ingredients. Add in soy sauce, fish sauce, sweet soy sauce, white pepper powder and continue to fry the rice for a couple of minutes./ Panaskan minyak dan goreng ikan masin duhulu. Angkat dan ketepikan. Dengan menggunakan minyak yang sama tumis bawang putih hingga naik baunya, masukkan ayam dan udang, kacau hingga separuh masak. Masukkan garam, dan lada sulah. Masukkan nasi dan bahan-bahan perasa dan masak beberapa minit lagi.
- Make a “well” in the middle of the wok and pour the beaten eggs in the well. Wait for 30 seconds and then cover the “egg well” with rice. Leave it for 30 seconds and continue to stir-fry the fried rice so the eggs form small pieces and mix well with the fried rice. Add in the fried salted fish and do some quick stirs, dish out and serve the Chinese fried rice hot./ Buatkan satu lubang ditenggah-tengah nasi dan masukkan telur, biarkan 30 saat dan tutupkan telur dengan nasi. Biarkan lagi 30 saat dan kacau nasi supaya telur hancur. Masukkan ikan masin dan padamkan api. Angkat dan taburkan dengan bawang goreng dan daun bawang.
