BREAKFAST MENU - KOISIMI NA KUNG / CHENGMAI FRIED NOODLES / MEE GORENG CHENGMAI



This tasty noodle reminiscent of Malaysia Hailam Mee. In fact it has the same taste and used the same ingredients and seasoning except one thing unique about this recipe it used bamboo shoot which was something new to me. I have never tasted any noodles using bamboo shoot so gave myself a GO to try this recipe. Recipe adapted from Chef Wan cookbook. If you love Hailam Mee then you will love this Koisimi Na Kung!!!. Perfect for breakfast or as one-dish-meal for lunch or dinner

INGREDIENTS
200 g yellow noodles / 200 g mee kuning
100 g chicken fillet / 100 g isi ayam
100 g shrimp shelled and deveined / 100 g udang dibuang kulit
3 stalk kale / 3 batang sayur kalian
1 carrot cut into ring / 1 batang lobak merah dipotong bulat
½ cup can bamboo shoot thinly slice / ½ cawan rebung tin dihiris
3 tbsp cooking oil / 3 sdb minyak masak
5 shitake mushrrom soaked and thinly slice / 5 cendawan kering direndam dan dihiris
5 cloves garlic-chopped / 5 ulas bawang putih dicincang halus

Seasoning
1 tbsp oyster sauce / 1 sdb sos tiram
¼ tsp ground black pepper / ¼ sdt serbuk lada hitam
2 tbsp light soy sauce / 2 sdb kicap cair
250 ml chicken stock / 250 ml stok ayam
1 tbsp of cornstarch mix with 3 tbsp water / 1 sdb tepung jagung campur dengan 3 sdb air.

PREPARATIONS
  1. Heat up oil and sauté garlic, shrimps and chicken till done / Panaskan minyak dan tumis bawang putih, udang dan ayam sehingga empuk.
  2. Add kale, carrot, mushroom and bamboo shoot / Masukkan kalian, lobak merah dan cendawan.
  3. Add seasoning and chicken stock / Masukkan bahan perasa dan stok ayam
  4. Add noodles and cornstarch / Masukkan mee dan tepung jagung masak selama beberapa  minit lagi.

Koisimi Na Kung atau Mee Goreng Chengmai adalah mee goreng Thai yang banyak menyerupai Mee Hailam kita. Bahan yang digunakan, rasa dan cara masakkannya pun sama..cuma apa yangmenarik perhatian saya tentang mee ini ialah ianya menggunakan rebung..sama ada fresh atau pun dalam tin. Ingin tahu bagaimana rasanya saya pun mencuba resipi ini. Beriya-iya beritahu anak umi masak mee goreng Chengmai..dia orang pun excited...alih....alih....dia orang tanya pula saya mana Chengmainya.....macam Mee Hailam aje...hempeh....memang macam mee Hailan. Ini tidak hairan, saya yakin ini berkemungkinan resipi yang ada pengaruhnya dengan masyarakat Cina di Thailand.

Seperti biasa mee, macam ini sedap makan dengan jeruk cili. Rebung memberikan kelainan sedikit pada mee.
