TOFU BOM ALA CHEF FARAH QUINN



This was absolutely delicious. Mashed tofu, breaded and deep fried. It's crispy outside and soft inside. I was waiting for a friend to pick me up for dinner and watched a cooking show on TV. Program hosted by an Indonesia Chef named Farah Quinn, It was a brief demonstration on how she prepared the Tofu. I couldn't resist trying the recipe and the moment I reached home bought some tofu and made one small batch. This recipe is unique and versatile, you can serve this as appetizer or finger food or even as a side dish accompany your main course. 

Don't ask me why it was named "tofu bomb", it don't explode while cooking or even when you eat it, the only thing that I can figure out may be it looks like a small grenade....may be !!!!. Anyway I love this.

Ingredients

  • 2 eggs- 1 for batter and 1 for breaded / 2 biji telur - 1 untuk adunan dan 1 untuk celup serbuk roti
  • 5 firm tofu / 5 keping tofu
  • 12-15 medium size shrimp half shelled / 12 -15 ekor udang sederhana besar dibuang kulit separuh
  • 3 stalks spring onion, minced / 3 tangkai daun bawang dihiris nipis
  • 5 kaffir leaves thinly slice / 5 helai daun limau dihiris nipis
  • 1 cup fried tiny achovies / 1 cawan ikan bilis halus yang digoreng
  • 3 tbasp flour / 3 sdb tepung gandum
  • 2 cups breadcrumbs / 2 cawan serbuk roti
  • 5 red chilies / 5 biji cili merah
  • 7 shallots / 7 biji bawang merah
  • 3 cloves garlic / 3 ulas bawang putih
  • salts to taste/ garam secukup rasa
  • 1/2 tsp chicken cube / 1/2 sdt pati kube ayam
  • sufficient oil for deep frying / minyak secukupnya untuk menggoreng

Directions

  1. Add chilies, shallots and garlic in food processor. Blend till fine then add in the tofu to form a fine paste / Masukkan cili, bawang merah dan bawang putih dalam food processor. Blend sehingga halus. Kemudian masukkan tofu dan blend lagi sehingga menjadi pes yang lembut,
  2. Add in 1 egg and mix in the tofu, spring onion, kaffir leaves,fried anchovies, chicken cubes and salts to taste / Masukkan 1 biji telur dalam bahan yang diblend tadi. Masukkan daun bawang, daun limau, ikan bilis goreng, pati ayam dan garam secukup rasa.
  3. Add in flour and mix well / Masukkan tepong dan gaul rata
  4. Place shrimp upside down in a tea cup and spoon batter full cup / Masukkan udang dalam acuan lompang dan sudukan bahan bancuhan tadi,
  5. Steam for 15 minutes and leave to cool / Kukus selama 15 minit dan biarkan sehingga sejuk
  6. Heat the vegetable oil in a large, nonstick skillet over medium heat. Drop the patties in beaten eggs and coat with breadcrumbs deep fry until crispy and golden brown on each side, about 5 minutes per side./ Panaskan minyak dalam kuali. Celup tofu dalam telur dan golek atas serbuk roti. Goreng sehingga kekuningan dan masak. lebih kurang 5 minit

Tofu Bom dari Chef sexy Farah Quinn, jangan tanya saya kenapa namanya "bom" , resipi ini tidak meletup semasa menggoreng atau pun semasa memakanya. Kemungkinan besar dinamakan bom mungkin kerana bentuknya yang bulat sekan bom tangan. Menarik resipi ini ialah ia sesuai dijadi sebagai sajian pembuka selera mahupun sebgai sajian minum petang. Cara membuatnya sama seperti membuat bergedil atau burger. Semua bahan di masukkan dalam processor, kemudian dikukus dan digoreng celup serbuk roti. Untuk menambahkan tarikkan pada resipi ini udang diletak menonggeng ke atas. Sedap dimakan bersama sos cili Thai.
