POACHED CHICKEN SANDWICH



Menu sarapan mudah disediakan, ayam rebus dicarik dan dimasukkan lada, daun pasrsley, garam dan mayo. Untuk kali ini saya menggunakan baguette lembut. Bahan dalam boleh dimasukkan apa saje, salad, timun atau  tomato



Poached Chicken Sandwich


  • 1/2 bunch flat-leaf parsley sprigs
  • 1 tbs whole black peppercorns
  • 2 spring onions, roughly chopped
  • 3 x 175g chicken breast fillets
  • 1 loaf white bread, sliced
  • 1 small iceberg lettuce, shredded
  • 2 cucumbers, thinly sliced into ribbons
  • 1 cup coriander leaves
  • Lime mayonnaise
  • 1 cup (250g) whole-egg mayonnaise
  • Finely grated zest of 1 lime, plus 2 tbs juice


METHOD

1 Place the parsley, peppercorns, spring onion and 1 tablespoon salt in a large saucepan filled with cold water and bring to the boil.
2 Add the chicken breasts, turn off the heat and cover with the lid. Stand for 1 hour to poach until cooked through.
3 Remove the chicken from poaching liquid, then shred using 2 forks.
4 Meanwhile, for the lime mayonnaise, place the mayonnaise, lime zest and juice in a bowl and stir to combine. Season to taste with sea salt.
5 To assemble the sandwiches, spread 1 slice of bread with some lime mayonnaise, then top with poached chicken, shredded lettuce, cucumber ribbons and coriander leaves.
6 Top with another slice of bread. Repeat with the remaining bread, mayonnaise, lettuce, chicken, cucumber and coriander leaves, then serve.
