TUESDAY BUKA PUASA MENU - CHILI SHRIMPS, VEGETABLES SOUP, SHRIMP SCRAMBLED EGGS, WHITE CHOCOLATE BREAD PUDDING AND GUAVA JUICE

Chili Shrimp
Mix Vegetables Soup
Scrambled Eggs Shrimp
White Chocolate Bread Pudding
Guava Lemonade Juice
These were what we had for our "buka puasa" yesterday. Light and simple Chinese course , Chili Shrimps, Mix Vegetables Soup, Shrimp Scrambled Eggs, White Chocolate Bread Pudding and Guava Lemonade Juice.

CHILI SHRIMPS

I've tasted this in Bangsar Seafood Restuarant, it's flavorful and fiery hot. This dish involves a delicious combination of chilli ,prawns, curry leaves and pounded dried shrimps. I got the recipe from HO CHIAK food program on TV.

INGREDIENTS
 
Add caption
500 gm large shrimp
2 tbsp turmeric powder
1 tsp salts
Sufficient oil for deep frying



Marinade shrimps with turmeric and salts. Deep fried shrimps till cooked and golden brown. Drain oil and set aside.

For The Chili Paste
15 dried chilies soaked
7 shallots
5 clove garlic
1" ginger



Blend all ingredients into wet paste and set aside.

For Frying
5 tbsp cooking oil
3 strig curry leaves
5 tbsp fried and pounded dried shrimps
7 bird's eyes chilies, thinly sliced
3 tbsp thick soy sauce
1 tsp chicken bouillon
2 tbsp brown sugar
salts to taste

  1. In a wok or large pan, heat  oil over medium-high heat. Stir-fry the wet chili paste until fragrant, about 30 seconds. 
  2. Add the sliced bird's eyes chilies and curry leaves.
  3. Continue frying for 5 - 8 minutes
  4. Add in fried dried shrimps, soy sauce, brown sugar and salts.
  5. Add 1/2 cup water if necessary.
  6. Stir fry until well mix and finally add in fried shrimps.
  7. Continue stirring until shrimps are welly coated with the chilies
  8. Ready to serve.
  9. Remove from the heat and garnish with chopped scallions. Serve with rice or vegetables.

Susahnya menjadi tukang masak di rumah bukanya memasak tetapi "Apa yang hendak dimasak". Setiap kali hendak menyediakan juadah berbuka puasa inilah persoalan yang sentiasa berlegar-legar di kepala. Bukan senang ya hendak menambat selera ahli rumah, wee.....memang memeningkan kepala. Itulah dia masalah yang sering saya hadapi. Pening hendak memusingkan menu harian. Semalam dek kerana terlalu buntu saya masak masakan Cina aje... senang main pap...pap...aje, saya buat Udang Goreng Cili, Sup Sayur dan Telur Pecah. Pemanis mulut saya buat White Chocolate Bread Pudding, bulan puasa ni roti kak umah tak luak, jadi saya bakar buat puding. Minuman pula saya buat jus guava lemonade. Jambu bantu pemberian kawan. Ringkas aje.

Resipi Udang Goreng Cili ini saya pernah makan di Bangsar Seafood, cukup sedap sebab dimasukkan udang kering yang digoreng dan ditumbuk terlebih dahulu. Resipinya saya ambil dari program HO CHIAK di TV. Anak-anak saya memang suka Udang Goreng cara ini. Sebaik-baik udang yang hendak digunakan ialah udang galah yang jenis kecil. Cukup best!!!! MESTI cuba!!!!
