This peanut sauce is always associated with Sate and very famous among the South East Asia especially Malaysia, Singapore and Indonesia. Serve best with compressed rice and sate. There are a few variation some with coconut some without. I prefer my sauce without coconut...some even add some beef in the sauce..since we are going to serve this sauce with satay and compressed it is best to make it plain. This sauce is also perfect with barbecues.
Ingredients / Bahan

25 dried chilies soaked / 25 tangkai cili kering
1 piece chopped Galangal / 1 " lengkuas
3 lemon grass / 3 batang serai
7 shallots / 7 ulas bawang merah
3 cloves garlic / 3 ulas bawang putih
7 candlenuts / 7 biji buah keras

300 g ground peanuts / 300 g kacang tanah tumbuk
1/2 cup vegetable oil / 1/2 cawan minyak masak
1/3 cup tamarind water / 1/3 cawan air asam jawa
2 tbl spoons brown sugar / 2 sdb gula merah
1 tbl spoon sugar / 1 sdb gula
salts to taste / garam secukup rasa
PREPARATION:
1. Heat oil in a frying pan and the blended ingredients and fry till fragrant and oil surface. Add the peanuts and fry for a few
minutes untill brown stir constantly / Panaskan minyak dan tumiskan bahan giling sehingga naik bau dan naik minyak. Masukkan kacang tumbuk dan kacau.

Resipi kuah kacang,,,untuk disajikan bersama satay dan nasi impit. Saya buat baru ini sempena dengan perayaan puasa 5 syawal. Saya lebih gemar kuah kacang yang simple dan plain..tanpa santan dan tanpa daging. Kuah satay ini juga sesuai dihidang bersama daging atau ayam bakar mahupun sebagai sos untuk babecue.
