Nasi Lemak is still Malaysian No : 1 breakfast menu. Though was considered not a healthy option but it's not easy to resist the temptation. I seldom cook it at home, most often got it from the best Nasi Lemak stall around. Today on popular demand by the children especially my son, Odin who reached home yesterday for his weekend holiday I prepared Nasi Lemak and Egg Sandwich for breakfast. There's five of us at home, I cooked 2 kilo with the hope it last until dinner.
I just bought a book by Marry Beth Chapman titled " Choosing To See", was hoping to have a light and easy weekend reading and the Nasi Lemak and Sandwich will take them away from me.
This Nasi Lemak goes well with Sambal Tumis Udang, Sambal Tumis Ikan Bilis or even Sotong. Today I go extra miles by adding Rendang Dendeng Daging. To get a high impact on today's menu I wrapped it with banana leave. The aroma increases once the nasi lemak was wrapped with banana leave.

NASI LEMAK BASMATHI
INGREDIENTS
1 kilo rice/ 1 kilo beras - I used basmathi
5 cups coconut milk/ 5 cawan santan - medium not too thick
2 screwpine leaves tie knot/ 2 helai daun pandan di ikat
Salts taste./ garam secukup rasa
METHOD
Wash rice, put in the rice cooker. Add coconut milk and screwpine leaves. Add salt to taste. Cook./ Basuh beras, masukkan santan dan daun pandan ke dalam rice cooker. Garam secukup rasa dan masak.

Menu sarapan pagi hari ini ialah Nasi Lemak Sambal Sotong dan Sandwich Telor. Saya gunakkan beras basmathi kebetulan ada lebih dari masak nasi minyak raya korban baru-baru ini. Saya memang suka nasi lemak masak dengan beras basmathi, nasi jadi cantik dan berderai. Sukatan santan pun mudah, mengikut sukatan beras. memang cantik dan lebih sedap.
Sambalnya saya buat sambal sotong, saya guna sotong kembang yang dibeli dipasar. Disamping sambal tumis, nasi lemak juga enak dimakan dengan rendang. kali ini saya buat Rendang Dendeng Daging, rendang ini agak kering dan manis sedikit sebab ramuannya menggunakan kicap manis.
