This steam kuih is made of rice flour and sweat corn. The normal version of kuih lompang is plain with grated coconut topping.This sweat corn lompang was given a new twist. Recipe heavily adapted from Kak Ita cookbook.
The kuih is normally steamed in a Chinese Tea cups. It's one of Malays favorite dessert.
Here what you need to prepared the Sweat Corn Lompang:-
INGREDIENTS
Ingredient A
80 gm sago flour/ 80 gm tepung sago
150 gm rice flour / 150 gm tepung beras
680 ml coconut milk / 680 ml santan
Ingredient B
230 gm sugar / 230 gm gula
160 ml thin coconut milk / 160 ml santan cair
Ingredient C
1/2 can sweatcorn / 1/2 tin jagung
1 tsp sweat corn essence / 1 sdt esen jagung
pinch of salts / secubit garam
yellow and green coloring
PREPARATION
2. Add ingredient A to ingredient while ingredient B is still warm / Masukkan bahan A ke dalam bahan B ketika bahan B masih lagi panas. kacau sehingga sebati
3. Sieve mixture and add ingredient C. Mix well until mixtur smooth. / Tapis dan masukkan bahan C, kacau sehingga sebati dan lincin
4. Divide mixture into two. One portion color it green and the other portion color it yellow./ Bahagikan adunan kepada dua bahagian. Satu bahagian warnakan kuning dan satu bahagian lagi warnakan hijau,
5. Steam the yellow portion first for 5 minutes and follow with the green layer for another 10 minutes./ Kukus bahagian kuning selama 5 minit diikuti dengan bahagian hijau selama 10 minit. Angkat dan sejukkan.
6. Leave to cool before removing from mold./ Biar benar-benar sejuk baru keluarkan dari acuan
