I used to watch Martha Stewart with her guest Chef preparing this Chicken Pot Pie. Gorgeous and so...so tempting. I have always wanted to try this, but thinking of preparing the pastry dough put me off. Anyway since now I knew where to get the store bought pastry dough, this Chicken Pot Pie seem to be much easier to prepare.
The best Chicken Pot Pie that I've tasted was at the DOME - Island Plaza Penang. I love the bowl they used...look's so classic.
If you love something hot, then you can use the curry version. Try this delicious heart warming meal. Perfect as one-dish-meal.
For The Fillings
- 1 tbsp. extra virgin olive oil / 1 sdb minyak zaiton
- 1 chicken breasts, cubed / 1 dada ayam dipotong kube
- 3 tbsp unsalted butter / 3 sdb cawan mentega
- 2 white onion, diced / 2 bawang besar putih dicincang
- 1 carrots, diced / 1 batang karot dipotong dadu
- 1 cup celery, diced / 1 cawan celery dicincang
- 2 potato, diced / 2 biji kentang dipotong dadu
- 1 bay leaf / 1 helai daun salam
- 4 cup broth, divided / 4 cawan stok ayam
- 3/4 cup flour / 3/4 cawan tepung
- 1-2 sheets Puff Pastry, thawed / Puff pastry yang sedia beli
- 1 egg yolk / 1 biji telur
- 1 tsp. water / 1 sdt air
- salt and pepper, to taste
- In a pan over medium heat, add olive oil and cubed chicken. Season with salt and pepper. Sauté until cooked through. Set aside. /Panaskan minyak zaiton dan tumis ayam sehingga bertukar warna. Masukkan garam dan lada sulah. Angkat dan letak sebelah
- In the same pan over medium heat, melt butter and add onion, carrots, celery, potato and bay leaf. Cook until soft. / Dalam kuali yang sama panaskan mentega dan tumis bawang besar sehingga layu. Masukkan kentang dan karot. Masak sehingga emput. Kemudian masukan celery dan daun salam.
- Add one cup of chicken broth and stir. Slowly add flour until mixture has thickened. Add remaining broth and continue to stir until well combined. Bring to a boil. / Masukkan 1 cawan stok ayam. Masukkan tepung dan biarkan pekat sedikit. Kemudian masukkan semula baki 3 cawan stok ayam tadi dan renehkan.
- Cover bowl with pastry./ Tekapkan pastry ke atas mangkuk yang berisi sup ini/Cut vents with a knife.
- In a bowl, whisk egg yolk with water. Brush the egg wash over the pastry. Let prepared bowl sit in the refrigerator for 15 minutes. / Dalam mangkuk lain pecahkan telur and campur sedikit air. Sapukan adunan telur ke atas pastry yang udah siap
- Place bowl on a cookie sheet and bake until top is golden brown, about 25 minutes. / Letak acuan dalam dulang pembakar dan bakar selama 25 minit sehingga masak
- Remove from oven and let cool a bit. Serve warm. / Keluarkan dari oven dan siap dihidang panas-pana.

Dulu saya rajin menonton program Martha Stewart, suka tenguk chef jemputan Martha. Salah satu favourite resipi yang sering dikongsikan ialah Chicken Pot Pie. Bestnya ialah pelajar dari Chef-chef ternama US. Saya sudah lama berhajat hendak membuat Chicken Pot Pie ini, tetapi dulu kurang cerdik tak tahu ada pastry siap ada dijual dikedai sebabnya selalu tenguk arwah kakak saya menyediakan pastry berlapis ini sendiri. Sekarang ini tidak payah susah dibegelek-gelek sediakan pastry beli aje yang dikedai macam-macam boleh buat. Cantik pula tu.
So inilah Chicken Pot Pie saya yang pertama. Saya guna acuan kecil senang tak membazir nanti. Bagi yang teringin dan nak test dulu sebelum buat boleh cuba di Cafe DOME. Chicken Pot Pie di sana sedap dan cukup menarik bekas yang digunakannya. Terus-terang saya kata membuatnya cukup senang dan berbaloi dari beli di luar.
