TODAY'S DINNER - SIAKAP STEAM ASAM/BEEF BROCCOLI AND CHIVES OMELETTE/ SIAKAP KUKUS ASAM PEDAS/ BROKOLI DAGING DAN TELUR DADAR KUCAI.

We're having Siakap Steam Asam Pedas, Beef Broccoli and Chives Omelette. Tonight is a Chinese or Nyonya course. This blogging things made me really in the mood for cooking, or it could be because I'm on leave, anyway the children benefited this a lot, mum doing all the cooking.  I picked Tyca up from her school, dropped by a bought fresh siakap at TESCO - Ipoh, wanted so much to have Siakap Steam the Asam Pedas Way. Omelette or any egg dish seem to be a must to my familay so I prepared Chives Omelette. Try to copy cat the recipe I tasted during my visit to Johannesburg, South Africa. I don't know what are so special about their omelette, I'm always craving for it. As for vegetables I prepared Beef Broccoli. Complete all the nutrient needed for a dinner.



Asam Steam Fish/ Ikan Kukus Asam 


Chives Omeletter/ Telur Dadar Kucai



Beef Broccoli/ Brokoli Daging

INGREDIENTS
1 fresh siakap, wash completely./ 1 ekor ikan siakap
pepper and salts/ lada sulah dan garam
cut pineapple/ nenas potong
5 stalk laksa leaf/ 5 batang daun kesom
7 tbsp tamarind juice/ 7 sdb air asam jawa
3/4 cup cooking oil/ 3/4 cawan minyak masak
2 tbsp sugar/ 2 sdb gula
1 cup water/ 1 cawan air

Marinate the fish with pepper and salts, leave aside./ Perapkan ikan dengan lada sulah dan garam. Letak sebelah

The gravy
15 dried chilies/ 15 batang cili kering
11 shallots/ 11 biji bawang merah
5 cloves garlic/ 5 ulas bawang putih
1 inch tumeric root/ 1 inch kunyit hidup
1 inch shrimp paste/ 1 inch belachan

Blend all the ingredients to form a paste.



METHOD
  1. Heat up steamer and steam fish for 20 minutes. Leave a side./ Panaskan kukusan dan kukus ikan selama 20 minit atau sehingga ikan masak. Letak sebelah.
  2. In an another pot heat up oil and fry the blended paste till fragrant. Add, salts, sugar and tamarind juice and water. Bring to boil./ Panaskan periuk dan tumis bahan giling sehingga naik baunya dan garing. Masukkan gula, garam, air dan air asam jawa. Masak hingga mendidih.
  3. Add daun kesum and simmer on low heat until gravy thick./ Masukkan daun kesum dan biar sebentar hingga kuah pekat sedikit.
  4. Pour gravy onto the steam fish./ Setelah masak, curah kuah ke ats ikan yang dikukus tadi.

Saya memang betul-betul berada dalam mood untuk memasak, mungkin sebab saya dalam cuti dan kebetulan pula terbitnya blog ini maka saya jadi ghairah untuk memasak. Tak apa sekurang-kurangnya terbayar hutang saya pada anak-anak. Sememangnya kalau waktu bekerja saya jarang masak, pakai resipi "tunjuk-tunjuk" aje. Resipi makan malam hari ini saya buat Chinese/Nyonya style - Siakap Kukus Asam Pedas, Telur Dadar Kucai dan Brokoli Daging.

Ringkas-ringkas tapi menyelera dimakan panas-panas.
