GULAI IKAN TALANG MASIN / SALTED FISH CURRY

The best Salted Fish Bones Curry that I had tasted was at the Padang International Rice in Transfer Road Penang, a real authentic Penang Curry.

The unique of this curry is that it uses salted fish bones. Ikan Talang is the best fish for this dish. Beside the main ingredients you can add in pineapple slice or eggplant or even sweet potatoes.

I added all. Serve with hot rice and Sambal Belacan.

INGREDIENTS
400 gm salted fish bones - I used Ikan Talang - soak for at least 1 hour
2 sweet potatoes quartered
2 eggplants quarter - I used green eggplants
5 slice of pineapples

For the Curry Paste
2 packet salted fish curry paste
1 coconut milk
2 cups water

Mixture all and put in a pot.

For Saute shallots
5 clove garlic - slice thinly
7 shallots - slice thinly
3 string curry leaves
1 tbsp cumin seeds
1 tbsp mustard seeds
5 dried chilies - cut into 1" lenth
1/2 cup cooking oil
Saute all ingredients and pour into boiling curry.

PREPARATIONS

In a pot add water, coconut milk and salted fish. Simmer together with sweet potatoes until sweet potatoes are done and salted fish cook.
Add in egg plant and pineapple.
Finally add in saute shallots.
Adjust taste. Don't add salts as the salted fish is salty enough.
