GULAI SINGKONG /LEMAK PUCUK UBI

This is another "kampung"  and Padang favorite dish. In Indonesia they this Gulai Singkong while here in Malaysia we called this Masak Lemak Pucuk Ubi. Tapioca shoot cooked in hot coconut milk curry. In this recipe I added half banana flower' aka jantung pisang. Both ingredients I chopped thinly. I love hot so more bird 'e eyes chilies go into this dish

2 bunches of tapioca shoots (separated from the fibrous stalks, cleaned, boiled till tender and squeeze out the juice chopped thinly)
1/2 banana flower ( cleaned boiled till tender and chopped thinly)
2 cups thick coconut milk
1 cup water
25 bird’s eyes chillies (pounded coarsely)
2 " piece of turmeric root
7 shallots
1/4 cup of dried anchovies (pounded coarsely)
salt and sugar to taste
    Method :
    1. Pound bird’s eyes chillies, turmeric root and shallots till fine and put into a cooking pot.
    2. Put in the tapioca shoots, banana flower and other ingredients and mix well.
    3. Continue stirring and let to boil over medium heat.
    4. Add salt and sugar to taste.
    5. Ready to serve .

    Saya masak Gulai Singkong ala Padang, campur dengan jantung pisang. Cara Padang ni pucuk ubi tu dihiris halus. Biasanya dimasukkan dengan terung pipit tetapi udah susah nak dapat terung pipit saya campur dengan jantung pisang. Kali ini memang say buat pedas, udah alang-alang nak makan saya buat peda. Mak oi pula tu buat tanban goreng memang dan sambal kuini, mak ooi ....memang laju, Dah tak payah lauk lain. Cukup 3 menu ni.
