EYBA'S BIRTHDAY CAKE 2 - RAINBOW CAKE



I love this rainbow cake the first time I saw it, not only it’s beautiful but it is also colourful and suitable for kiddos birthday party. However I do had a bad experience when assembling the cake, is either the cake is soft or it's clumsy me. As I said in my previous entry I almost throw the cake away.....lucky me I managed to modify the cake and it turned out fantastic. It look terrific with a thin layered of cream  frosting on each layer.

The actual cake recipe itself is a plain white/yellow cake but you could of course add the colour of rainbow. You could also use another vanilla cake recipe if you don’t want to use that much butter. It's simple but time consuming, you have to bake each layer separately, however it's worth and very appealing .This recipe is for a 6 layer cake made in a 6-8" tin. Many of the recipes you will find online will suggest that you use icing in between each layer  I used a cream filling which I recommend for lighter, less sickly sweet finish.






Rainbow Cake

Ingredients:


2 sticks (226 g) butter, room temp
2 1/3 c (426 g) sugar
5 egg whites, room temp
2 teaspoons vanilla
3 c (426 g) flour
4 tsp baking powder
½ tsp salt
1 1/2 c (355 ml) milk, warmed for 30 sec in microwave to bring to room temp
Red, orange, yellow, green, blue and purple GEL food coloring. Liquid will not be vibrant enough!

Directions:


Preheat the oven to 350F degrees. Oil and line how ever many 9” cake pans you have (I have three and I just reused them).


Sift together the flour, baking powder and salt. Set aside.

Cream the sugar and butter, then add the egg whites (I cracked them all into one bowl) and add them a little at a time. Add the vanilla and mix until fully incorporated. Then, alternating between wet and dry, add the milk and flour mixture in two parts.

Divide the batter amongst 6 bowls (It's about 1 c each, but I did it by weight. Weigh your mixing bowl before you begin adding ingredients and then subtract the weight of the bowl from the final measurement after the batter is completed. Divide that number by six and add that weight of batter to each bowl), and then whisk a fair amount of the appropriate food color into each bowl. Keep in mind that the color of the unbaked batter will be the color of the baked batter. Pour into the pans and bake for 15 minutes each.

When you remove them from the oven, let them rest on the cooling rack, in the pan, for ten minutes. Then flip, cover, and stash them in the fridge to cool quickly.

  5. salam kak paty! aduhhhhhh... mmg menawan kalbu betul kek pelangi tuu tp nak membuatnyer pun menawan waktu jugak sbb kalau boleh tuang semua sekali takpe jugak kan? ini kena bakar asing2 aduhhhh..surrender lerr kita tp teringin sgt nak makan sbb ada krim putih2 tuuu :D talam kat bwh tu kita suke :D

    OMG... Ive also decided to bake this bday cake for my girl on her 21st bday!!! but by looking at the height & the size n the patience... tapi berbaloi rasa nyer bila lihat hasil nyer kan kak??

  8. Salam...Tersangatlah kreatifnya...Suka lihat hasil kek warna-warni tu..memang sesuai dengah namanya, Rainbow cake...Kalau saya tidak punya kesabaran atau creativity macam ni...Selalu kalau buat kek cuma 1 warna saja....
