Here is my Carrot Walnut Loaf Recipe. The ingredients and the process is similar with banana bread or zucchini bread. The only difference is well the carrot. The texture is soft and dense. Easy to prepare and economical.
Carrot Walnut Loaf
Ingredients:
2 cups ggrated carrot / 2 cawan lobak merah parut
1 cup vegetable oil / 1 cawan minyak sayur
1/2 tsp salt /1/2 sdt garam
1 1/2 cups flour / 1 1/2 cawan tepung
2 tsp baking powder / 2 sdt baking powder
1/2 cup to 1 cup chopped walnuts / 1/2 - 1 cawan walnut
1 cup granulated sugar / 1 cawan gula pasir
2 tsps vanilla extract / 2 sdt vanilla
3 eggs / 3 biji telur
- preheat oven to 350-375
- beat together oil, egg yolks (reserve whites) sugar, and hot water
- stir in grated carrot
- stir in walnuts and vanilla
- stir in salt, baking powder
- stir in flour, 1/2 cup at a time
- beat egg whites
- fold in egg whites
- bake for 30-40 minutes, till toothpick comes out clean
