Hello there,I believe evry one is having a great time, yesterday was Maulidur Rasul, Muslim Prophet Birthday, tonight is Chap Goh Mei and tomorrow will be Thaipusam, what a wonderful celebration a real 1Malaysia situation we have here in Malaysia. Well it's me again with my cupcakes and this time is Pink Lemonade Cupcake. I found this in foodgawker. This cupcake is incredibly moist with citrus flavour. Very nice and perfect for tea and small party. This cupcake is topped with Lemon Buttercream Frosting with sweet pink color.....yeah just nice for little pricess at home.
Pink Lemonade Cupcakes

Yields: 12 cupcakes

6 oz. butter, melted
1 c. + 2 tbs. cake flour
½ c. + 2 tbs. sugar
1 ½ tsp. baking powder
½ tsp. salt
Zest of 2 lemons (about 1 rounded teaspoon)
¼ c. sour cream
1 tbs. lemon juice
2 large eggs
Lemon Buttercream Frosting:
4 tbs. unsalted butter
2 c. confectioners’ sugar
1 ½ tsp. lemon juice
1-2 tbs. milk

Melt the butter and set aside until it starts to solidify again. You want it still pourable but not totally melted.
Preheat oven to 350 degrees F. Line a 12-cup muffin tin with paper liners and set aside.
In a large mixing bowl, combine cake flour, sugar, baking powder, salt, and lemon zest. With the mixer on low, gradually add the butter and sour cream.
Add lemon juice and eggs, one at a time. Mix only until combined to make sure that the cupcakes stay light and fluffy.
Fill prepared muffin cups two-thirds full of batter. Bake 18-21 minutes until light and fluffy or a cake tester comes out clean.
Cool in pan 10 minutes then transfer to a wire rack and cool completely.
For buttercream frosting:
Cream together the butter and confectioners’ sugar. Add lemon juice and then the milk 1 tablespoon at a time until smooth and creamy, should be around 1 ½ tablespoons.
Once cupcakes are cooled, spread cupcakes with frosting or frost using a #12 piping tip.
Cuti-cuti ini bukanya rehat malah lagi rancak di dapur.ni baru ada kesempatan nak update blog. Menu breakfast pagi ini terlepas tetapi tak apa saya akan buat siaranya sebentar nanti. Memang hebat cuti kali ini semalam sibuk dengan Maulidur Rasul malam ni sibuk pula dengan dentuman mercun menyambut Chap Goh Meh dan esok sibuk berarak untuk menyambut Thaipusam...begitulah meriahnya 1Malaysia...ni. Ok back to N3 hari ini, sepatiutnya semalam saya masukkan tetapi akan sibuk sedikit semalam....cuma sekarang aje ada kesempatanya. Resipi cupcake ini saya ambil dari foodgawker dan lupa pula nak catit nama pemyumbangnya. Cupcake berperisa lemon, cukup sedap dan lembap. Warna dan rasanya cuka sesuai untuk majlis sekecil di rumah.
