STIR FRIED SPINACH WITH CHICKPEAS


Another simple yet satisfying dish to accompany rice for lunch or dinner. Very simple ingredients and very simple method of cooking. You can add chicken fillet or shrimps if you like..but I would prefer it plain, also another dish perfect for vegetarian.

STIR FRIED SPIANCH WITH CHICKPEAS


INGREDIENTS

2 (14 ounce) cans of chickpeas, drained and rinsed
4 ounces baby spinach leaves
1 red onion, finely sliced
2 tablespoons olive oil

Heat the oil in a  wok and add the onions, stir fry for approximately 5 minutes.  
Add the chickpeas and stir fry a further 2 minutes and salts to taste
Reduce the heat and simmer for approximately 10 to 15 minutes.  Add the spinach 1 minute before removing from heat and stir through.  Serve with rice or noodles.



Satu lagi sajian simple untuk disajikan bersama nasi....mungkin ia agak pelik bagi kita tetapi di Latin America dan India kacang kuda ini memang digemari bukan sahaja membuat kari tetapi juga dalam sayuran. Ini adalah sajian yang cukup sesuai bagi mereka yang mengamalkan diet vegetarian. Mudah dan ringkas
