BLESSING FRIDAY WITH EGG CHEESE SANDWICH AND COCONUT SAUCE PANCAKE



It's Friday today... a blessing Friday, Eid Adha is just around the corner and we gonna have a long weekend in conjunction Aidil Adha.  A busy time for home maker to get things done. I don't really have any plan for Adha....look's likelihood it gonna be an easy and lazy holiday...staying home...cooking ....and reading.

Today my daughter Tyca is on her semester break and she took over the kitchen and prepared all these. Learning to make pancake was her mission this semester break. I just guide her on how to make Coconut Sauce Pancake. Cheese and Eggs Sandwich was from Tyca too. So let's take a look how Tyca prepared it.


This recipe is a makeover of the traditional sandwich often served at functions with the addition of cream and cottage cheese.

Ingredients

  • 250ml tub Philadelphia Light Cream for cooking
  • 200g tub low fat cottage cheese
  • 1 Tbs Dijon mustard
  • 2 Tbs lemon juice
  • ½-1 tsp salt
  • ¼ tsp pepper
  • 500g chicken breast fillets, poached, finely chopped (see poached chicken recipe)
  • 1 cucumber, finely sliced
  • ½ cup parsley, finely chopped

  • loaf of wholegrain sliced bread (make sure it’s a perfect square loaf with 18 slices)
  1. The chicken mixture can bemade the day before and the sandwiches made up and chilled well before being served. This sets the filling and makes them easier to cut. If you don’t have an electric knife then pop them in the freezer for an hour before cutting with a serrated knife.
  2. Make a hard boil egg. Mashed and set aside.

    Blend cream cheese, cottage cheese, mustard, lemo juice, salts & pepper with stick blender until smooth. Add in mashed eggs.

    Spread 1/3 cup measures of mixture (this ensures all sandwiches are the same thickness) over 9 slices of bread and top with another.
  3. Wrap and chill sandwiches before removing crusts and cutting into little triangles or squares with a serrated knife.

    Jumaat yang penuh rahmat dan dua hari lagi kita akan menyambut Adil Adha....sekejap aje masa berlalu.....Saya tidak mempunyai apa-apa rancangan cuti ini...rasanya rehat dirumah aje. Anak-anak mula pulang lewat petang nanti. Pagi ini sarapan disediakan oleh anak saya Tyca yang sedang dalam cuti semester. Tyca ni tengah belajar membuat pancake, katanya masa menonton Junior MASTER CHEF AUSTRALIA, diri terasa malu kerana anak-anak seusia 9-12 begitu profesional sekali meyediakan sajian. Tyca minta saya ajar buat pancake, jadi saya berikan Tyca resipi yang mudah dan ringkas. 

    Cheese & Egg Sandwich disediakan oleh Tyca...dia memang hantu cheese....
