KOLE-KOLE KACANG

Kole-kole kacang is made of green beans flour. I haven't tasted it for quite sometimes. This kuih is popular among the southern especially the Johorian. I hardly find this in Northern region. I used to think that I can only make this kuih with the green beans, mill in the flour mill shop, not realizing that nowadays there are ready made green beans flour. Then again I don't really have confident to use the ready made green beans flour. Last week I met this Putu Mayong seller, asked him where did he milled his rice for the putu mayong. He gave me the direction of the mill shop and was about to send my green beans for milling until my friend told me that the ready made green beans flour are good enough to make a good kole-kole kacang, so I gave myself a tried and here goes my Kole- Kole Kacang. 


Got the look and got the taste. At last I did it.....


INGREDIENTS - for 7" tray
2 cups green bean flour/ 2 cawan tepung kacang hijau
1 cup plam sugar/ 1 cawan gula merah
1/2 cup sugar/ 1/2 cawan gula pasir
4 cups coconut milk/ 4 cawan santan
1 cup water/ 1 cawan air
2 cups thick santan for the coconut milk crumbles/ 2 cawan santan pekat untuk buat tahi minyak

METHOD
Boil 2 cups thick santan until it form a crumps, drain and put a side. The left over oil mix with the flour ingredients./Masak 2 cawan pati santan sehingga menjadi tahi minyak. Angkat dan ketepikan. lebihan minyak jangan dibuang. Masukkan kedalam bancuhan tepung.


Caramelise palm sugar, sugar and water. Leave to cool and put aside/ Masak air gula dengan 1 cawan air. Ketepikkan dan sejukkan seketika.

Combine green beans flour, coconut milk, salts,caramelised sugar and the left oil from the cocunut crumps in a pot. Bring to boil and stir constantly until thickened./ Campurkan semua bahan, tepung kacang hijau, santan, garam dan air gula. Masak di atas api sederhana sehingga adunan pekat dan tidak bergentel.



Pour into tray and leave to cool./ Tuang ke dalam acuan dan  sejukkan.

Saya memang sudah lama berhajat nak makan kole-kole kacang ni, tetapi susah nak dapat di kawasan saya. Saya pula berpendapat hendak membuat kole-kole kacang ini mesti pakai kacang hijau yang dikasar halus. Tidak pula saya sedar bahawa kuih ini boleh dibuat dengan menggunakan tepung kacang hijau yang sedia ada di kedai. Walaupun kurang yakin dengan tepung kacang hijau saya cuba juga kerana susah nak cari kedai mesin tepung.

Alhamdulillah nampaknya Kole-Kole saya ada rupa dan ada rasa.... maknanya jadilah kuih saya ni. Insyallah akan cuba sekali lagi, kali ini nak pakai kacang hijau yang dimesin... Amin......
