COCKLES SOUP WITH PINEAPPLE SAUCE/KERANG REBUS DAN SOS NENAS

A simple and healthy food, cooking without oil yet delicious.




INGREDIENTS2 kilo small cockles / 2 kilo kerang
5 cups water/ 5 cawan air
1 (1 1/2-inch) piece fresh ginger, peeled, thinly sliced, and cut into very thin matchsticks (1/4 cup)/ 1 1/2 inch halia hiris memanjang
1/2 cup (1-inch) pieces of fresh cilantro stems, plus 1/4 cup fresh cilantro leaves/ 1batang daun sup potong halus
2 red chili/ 2 cili merah hiris
1 ONION/ 1 biji bawang besar hiris halus
2 lemongrass - smashed/ 2 batg serai titik
1 bunch scallions (white and pale green parts only), coarsely chopped (1/4 cup)/1 tangkai daun sup potong 1 "
1/2 teaspoon fine sea salt/ 1/2 sdt garam
METHOD

  1. Rinse cockles in a colander under cold running water./ Basuh kerang bersih-bersih dan toskan.
  2. Bring water to a boil in a 12-inch heavy skillet over high heat, then, ginger, cilantro stems, scallions, and sea salt and return to a boil. Add cockles and cook, covered, until shells open wide, 3 to 5 minutes. (Discard any cockles that remain unopened after 5 minutes.)/Didihkan air masukkan serai, bawang besar, cili, daun bawang, daun sup didihkan sekejap. Masukkan kerang dan masa dan berbuka.
  3. Ready to serve with or without the soup./Sedia untuk dihidang sama dengan supnya atau tidak,
Pineapple Sauce/Sos Nenas
1 pineapple grated/ 1 biji nenas diparut
1/2 cup blended garlic/ 1/2 cawan bawang putih blended
1/2 cup grounded  peanut/ 1/2 cawan kacang tumbuk
1/2 cup fresh chili blended/ 1/2 cawan cili merah yang diblend
salts and sugar to taste/garam dan gula secukup rasa.e
Scoop each item in a plate and serve.
