EYBA'S BIRTHDAY CAKE 1 - STRAWBERRY SPONGE CAKE

First and Foremost I would like to thank everyone who had extended best birthday wishes to my princess EYBA.....thanks I really appreciated that and as a mom I wish all the best for her especially in her study and both "dunia dan akhirat". Her birthday felt on the day she had her March exam and I told her to focus on her exam and celebrate on Saturday. So we had a small little party cartered for 10 of her BFF (Best Friends For Ever) at home. Very simple and light party and the menu for the party were :-

White Fried Rice Vermicelli
Buffalo Chicken Wings
My Homemade Chicken Nuggets
Some Club Sandwichs
Espresso Chocolate Chips Cookies
Bread Caramel Pudding

as a door gift to the guests I packed Apam Polka Dot.

Everything when out out smoothly except the night before the birthday party....my goodness I'll almost have a heart attack.  I promised Eyba that I'll arrange her birthday party and I will bake her "the Rainbow Cake". She was really excited about the rainbow cake. However while assembling the rainbow cake two of the cake layer cracked and I freaked out.  It was 11 pm and the party was the next day. I have to forget about the rainbow cake and think of something else. Never want to disappoint my girl, and at almost midnight I have to move to plan B, bake another cake and this time around it should be a simple cake and no more disappointment.... A Sponge Cake !!! - my life saver !!!!

Thank God this time the cake turned out well. Early in the morning I made the butter cream and spread on the cake...as usual a typical me a simple decoration with sugar beads.....I'm not an expert in  decorations. By 10 am..my friend Sally dropped over to help me with the party and saw the cake. She said it was too plain and she helped me with three beautiful roses.....well she is the expert and it made a perfect sweet birthday cake for sweet 15.

I got everything ready for the party and while  the girls were having fun in the living room...I pulled Sally to the kitchen to assist me modifying the rainbow cake. That's me......I can't accept failure....yes dare to fail but not failed...so what I did with the rainbow cake...with Sally helps I reinvent it my way....the normal rainbow cake size is 6 - 8 '' I cut it into 4" size layered it with cream cheese frosting, Frosted the cake and asked my daughter Myraz to play with the sugar beads all over the cake. OMG it was lovely.....I almost throw the cake......but it turned out just nice. Put the candle with the words IBA and IBA made another birthdays wishes...with her second birthday cake so called "The Nightmare Rainbow Cake" (for full feature of the "The Nightmare Rainbow Cake")...see in my next entry.

Gosh a very dramatic birthday event and  the morale of the story and what you can learn from my experience was.....don't ever do things at last minutes. and don't take things for guanranted,  anticipate and be be alert for any  set back.....always have back up plan...Plan B< C...etc... that'w what I applied in my work and the same goes in the kitchen......!!!!!ha...ha...anyway one good thing I have, I always move beyond the limit when I'm in the freaking situation.  Ha...ha...don't you ever follow my style...bad for the HEART.
