MYRAZ'S BIRTHDAY CAKE - BLUE OCEAN VANILLA CAKE



Finally I managed to find time to post this entry. This is my fourth daughter birthday cake. She turned 17 yesterday. She wanted to move away from chocolate cake and requested something different with blue frosting. She loves blue so I made her vanilla cake with Marshmallow Blue Frosting. For easy tagging since I will be trying more vanilla cakes I named this cake Blue Ocean Vanilla Cake.

Before this I have book marked a few Vanilla Cake recipes and the one that I wanted to try are from Smitten Kitchen and Rock Recipe. I finally picked up the recipe from Rock Recipe http://rockrecipes.blogspot.com/2010/08/best-vanilla-cake.html when I saw Linda from Lemondrop foodie http://lemondropsfoodie.blogspot.com/2011/08/vanilla-bean-cake-with-vanilla.html baked such lovely cake. Unique about RockRecipe Vanilla cake was the used of evaporated milk. The evaporated milk add lovely level of moisture and richness to the cake. The cake is dense and moist. In fact this was a perfect birthday cake for sweet 17 and look's like it was greatly enjoyed by everyone.


Blue Ocean Vanilla Cake


Sift together and set aside:
1 & 1/2 cups cake and pastry flour
1 & 1/4 cups all-purpose flour
2 1/2 tsp baking powder
1/4 tsp salt

Cream together until fluffy:

1 cup unsalted butter, at room temperature
2 cups sugar

Add, one at a time, beating well after every addition;

4 eggs at room temperature

Beat in

4 teaspoons vanilla extract

Gently fold in the dry ingredients in three equal portions, alternately with

1 cup undiluted evaporated milk

When adding dry and wet ingredients alternately in any baking recipe, always begin and end with the dry ingredients.

Pour batter evenly into 2 well greased and floured 9 inch cake pans. Bake in a 325 degree F oven for about 35-40 minutes or until a toothpick inserted in the center comes out clean. Watch it carefully, you will not want to overbake this cake, as soon as the toothpick comes out clean, remove the cake from the oven and let it rest in the pans for 5 minutes before turning it out onto a wire rack to cool completely.

Frost with Marshmallow Frosting and serve.

Marshmallow Frosting

3 egg whites
¼ tsp cream of tarter
2 tsp vanilla extract
1 cup sugar
½ cup corn syrup
3 tbsp water

In a small saucepan combine sugar, corn syrup and water. Bring to a boil over medium heat and continue to cook until the mixture reaches 240 degrees F on a candy thermometer or when a teaspoonful of the mixture dropped into ice water forms a soft ball that holds its shape when cool.

Whip the egg whites, cream of tartar and vanilla extract to soft peaks in a large bowl. With the mixer on medium high speed, slowly begin to pour the sugar syrup down the side of the egg white bowl in a thin continuous stream. Continue to whip the frosting until it forms stiff peaks.

Frost your cake immediately with this frosting while it is still slightly warm as it is easier to spread smoothly than if allowed to cool completely.


Akhirnya barulah berkesempatan hendak masukkan N3 birthday cake Myraz. Anak dara saya yang ke empat memasuki alam remajanya semalam. 6hb Januari 2012 Myraz genap 17 tahun dan tahun ini akan menduduki peperiksaan SPM. Untuk birthday keknya Myraz minta sesuatu yang lain...agaknya tidak mahu sama dengan Oden dan Tyca..semuanya chocolate kek. Pada mulanya saya bercadang hendak cuba Rainbow Cake..tapi kesuntukan masa pula..mungkin Rainbow Cake saya reserve untuk Eyba, March nanti. Saya buatkan Myraz Vanilla Cake. Vanilla Cake ini biasanya dipanggil yellow atau white cake. Banyak resipi Vanilla Cake ini tetapi saya telah simpan dalam list saya dua rujukan satu dari Smittenkitchen dan satu lagi dari Rock Recipe.

Akhirnya saya memilih Rick Recipe kerana saya nampak bahanya menarik, menggunakan 1 cawan susu cair dan frostingnya juga menarik iaitu Marshmallow Frosting. Ini pertama kali saya menggunakan maeshmallow frosting..bagus juga tidak berapa manis. Untuk memudah tagging nanti, kerana saya pasti akan mencuba resipi-resipi vanilla yang lain, jadi saya namakan kek ini Blue Ocean Vanilla Cake...Myraz memang suka biru..dibiliknya semuanya biru..peminat SUPERMAN dan Faizal Tahir...so biru macam superman.

Kek ini memang sedap, lembap dan kaya dengan vanilla. menurut yang empunya resipi ini sebaik-baiknya membuat kek vanilla ini kenalah menggunakan vanilla asli..dia melarang keras kita menggunakan vanilla tiruan. Macam kita disini manalah hendak dapatkan vanilla bean kan??so terpaksa menggunakan yang tiruan jugalah. Agak-agak kalau gunakan yang original bagaimana pula rasanya ya.

Biasanya kalau kita beli kek ini ianya agak kering tetapi kek ini lembap dan memang sedap kena betul dengan marshmallow frosting.
