SPAGHETTI MARINARA


Years back I took my children for simple HITEA at a cafe called Winter Summer in Gurney Plaza Penang, my daughter ordered a plate of Spaghetti Marinara, it was awesome with a hint of tomyam taste. Ever since then my children kept asking me to make one. 

The problem with me was that I won't make it if I do not have a complete ingredients. I was waiting for fresh mussels..but couldn't find one, until one fine day I saw a recipe of spaghetti marinara with all the seafood and fresh clams. That gave me an idea to substitute the mussels with clams. Anyways it tastes  as good as mussels.


Ingredients (serves 6)


  • 2 tbs olive oil, plus extra to toss
  • 1 onion, finely chopped
  • 3 garlic cloves, crushed
  • 1 cup (250ml) chicken stock
  • 1 can "prego" sauce (small)
  • 5 fresh tomatoes crushed 
  • 500g spaghetti
  • 500g marinara mix*
  • 300g clams, washed, de-bearded
  • 100 g squids washed cut into rings
  • 200 g medium size shrimps
  • 2 tbs chopped flat-leaf parsley

  1. Heat oil in a large saucepan over medium heat, add onion and cook for 3-4 minutes or until softened.
  2. Add garlic and wine, and simmer 2 minutes. Add prego and crushed tomatoes, and simmer 15-20 minutes further, stirring occasionally until slightly thickened. Season well.
  3. Cook the pasta in boiling, salted water until al dente. Drain and toss in a little olive oil.
  4. Add marinara mix and mussels, shrimps and squids to tomato sauce, cover with lid and cook 3-4 minutes over medium-high heat, discarding any mussels that do not open.
  5. Stir in parsley, then toss the sauce through the pasta and serve.

Lama dah berhajat hendak masak spaghetti marinara, anak-anak selalu minta ni tetapi saya ini mempunyai taiat jika tidak cukup bahan saya tidak akan buat sehinggalah saya terpandang satu resipi spaghetti marinara yang menggunakan lala sebagai ganti kupang. Nampak begitu mengiurkan jadi saya cari semua bahan dan buat ini...memang syok ialah lebih-lebih lagi agi mereka yang suka meratah.

Kalau yang sukakan masam sedikit bolehlah dimasukkan sedikit perencah tom yam. Saya pernah mencubanya di salah sebuah restuarant di Penang. Kalau ditamahkan sedikit perencah tom yam rasanya akan lebih sedap...ada masam, masin dan manis.

Sesuai buat hidangan malam.
