CHERRY CLAFOUTI



Some context on clafoutis from Wikipedia :-
Clafoutis, sometimes in Anglophone countries spelled clafouti, is a baked French dessert of black cherries arranged in a buttered dish and covered with a thick flan-like batter. The clafoutis is dusted with powdered sugar and served lukewarm.


A traditional Limousin clafoutis contains pits of the cherries.[1] According to baking purists, the pits release a wonderful flavor when the dish is cooked. If the cherry pits are removed prior to baking, the clafoutis will be milder in flavor.
The clafoutis comes from the Limousin region of France and while black cherries are traditional there are numerous variations using other fruits including red cherriesplumsprunesapplescranberries or blackberries.[2] When other kinds of fruit are used instead of cherries, the dish is properly called a flaugnarde.
The dish's name derives from Occitan clafotís (Occitan pronunciation: [klafuˈti]), from the verb clafir, meaning "to fill" (implied: "the batter with cherries"). Clafoutis apparently spread throughout France during the 19th century.
The clafoutis is best served warm with a dusting of confectioner's (powdered or icing) sugar and maybe a small dollop of yogurt, creme fraiche, or even softly whipped cream. Although fresh cherries have a short season, we can enjoy this dish during the rest of the year. Instead of fresh cherries we can use bottled or canned cherries that are packed in a syrup. 
 I was intrigued to try this  recipe the moment I saw it on TV. OMG for two consecutive days it appeared on TV one from Anna Olson - Sugar and one from Australia Jr Master..the pudding looks so gorgeous and I can't help myself for trying it. Anna Olson named it "one step cherry pie" yeah...it can be serve as a cherry pie if made the crust. However the recipe I'm sharing with you is from Julia Child...it's so simpleYou simply mix the batter and bake it. 

The  Clafoutis can be made with other fruits and now I am looking forward to experimenting with it. I have seen a few blueberry clafoutis that have been looking good...peach...apricots  are all the options that you can explore

For things like clafouti you can't go wrong with Julia Child's recipe. While this serves 6-8 people for dessert, it also makes a wickedly indulgent breakfast for 4!


Julia Child's Clafouti
serves 6-8

1 1/4 cups milk / 1 1/4 cawan susu - boleh juga guna susu cair
1/3 cup sugar / 1/3 cawan gula
3 eggs / 3 biji telur
1 Tablespoon vanilla / 1 sdb vanilla
1/8 teaspoon salt / 1/8 sdt garam
1/2 cup flour / 1/2 cawan tepung
3 cups cherries, pitted / 3 cawan ceri segar buang biji
1/3 cup sugar / 1/3 cawan gula
powdered sugar / gula ising

In a blender blend the milk, sugar, eggs, vanilla, salt and flour. Pour a 1/4 inch layer of the batter in a buttered 7 or 8 cup lightly buttered fireproof baking dish. Place in the oven until a film of batter sets in the pan. Remove from the heat and spread the cherries over the batter. Sprinkle on the 1/3 cup of sugar. Pour on the rest of the batter. Bake at 350 degrees for about for about 45 minutes to an hour. The clafouti is done when puffed and brown and and a knife plunged in the center comes out clean. Sprinkle with powdered sugar, serve warm./ Dalam blender masukkan susu, gula, telur vanila, garam dan tepung. blend semua bahan ini. Tuangkan separuh dari adunan itu kedalam acuan yang disapukan dengan mentega, masukan ke dalam oven sehingga agak keras sedikit, keluarkan dari oven dan susunkan ceri dan taburkan gula curahkan separuh lagi adunan dan bakar 350  F lebih kurang 45 atau sehingga kekuningan. Taburkan gula ising di atasnya. Sedia dihidang

Sudah banyak kali dah saya lihat resipi ini ditayangkan di TV...satu dalam program Sugar Anna Olson, satu dari rancangan Australian Jr Master Chef dan satu lagi dalam rancangan Chef At Home with Micheal Smith...meleleh air liur tenguk dia orang buat..tapi kita susah hendak dapat fresh cherries ni...sudah la bermusim..mahal pula tu..takut buat nanti anak2 tak berkenan kan dah membazir. Jadi saya tunggu aje..tunggu masa yang sesuai hendak dapatkan ceri murah...so sekarangla masanya segala jenis berries ada di suoermarket...blueberry, blackberry, cranberry...dan cherry..berlambak-lambak dan murah..kalau harhaga biasa selalunya lebih dari RM10 sekarang semua berries ini saya dapat less then RM10..berbaloi dan masa ni lah saya nak test resipi2 yang main berries ini.

Ceri Clafoutis ini adalah salah satu daripadanya. Resipi ini sebenar asalnya dari France...dessert kegemaran orang Perancis. Ramuanya mudah aje..telur dengan susu atau krim kemudian dibakar. Kalau kat Malaysia ni kita lebih senang namakanya pudding bakar aje....Sedap clafoutis ini lembut dan berkrim. Paling popular selalunya dengan ceri tapi boleh juga gunakan buah-buahan yang lain blueberry..blackberry...cranberry...strawberry....apricot dan peach semua boleh...janji tekak boleh terima.
