SUNDAY LUNCH - MALAY SET LUNCH / LEMAK KANGKONG TERUNG PIPIT, AYAM GORENG MADU AND TENGGIRI ASIN




The original plan was to have lunch outside, but then again I couldn't figure out where to eat so I headed to the kitchen and made simple Malay Set Lunch - Water Spinach & Tiny Egg Plants cooked in spicy yellow curry called "Masak Lemak Cili Padi". I love it hot and spicy and definitely I used more bird's eyes chili in my gravy. This masak Lemak is Malaysian-Malay favorite and pair very well with salted fish.

For my children I made them Honey Fried Chicken. Chicken marinated with some curry powder and honey. Deep fry with onion and curry leaves. Perfect with hot steam rice. No doubt it's a simple Malay Set Lunch...mind you it was satisfying enough to last you till dinner.

Here's my Masak Lemak Kangkong Recipe

INGREDIENTS
1 bunch water spinach  cut into 1" length / 1 ikat kangkong dipotong
1 bunch tiny egg plants - crushed/ 1 genggam terung pipit diketuk-ketuk  
2 cups thick coconut milk / 2 cawan santan pekat
1 cup water / 1 cawan air
1/2 tsp chicken cube / 1/2 sdt pati ayam
5 tbsp anchovies - soaked / 5 sdb ikan bilis direndam
1 lemongrass- crushed / 1 batang serai dititik
salts to taste / garam secukup rasa
1 tiny tamarind pulp / 1 keping kecil asam keping

Ingredients to be pounded

25 bird's eyes chili /25 biji cili padi
7 shallots / 7 biji bawang merah
2" turmeric roots / 2" kunyit hidup

Pound all ingredients till fine /Tumbuk semua bahan sehingga halus

PREPARATIONS

  1. In a pot bring to boil water and pounded ingredients. Add in crushed lemongrass / Dalam periuk renehkan air, bahan tumbuk dan serai.
  2. Add coconut milk, water spinach , egg plants, anchovies, tamarind pulp, salts and chicken cube / Masukkan santan, kangkong, terung pipit, ikan bilis, asam keping, pati ayam dan garam secukup rasa.
  3. Stir constantly and simmer until water spinach and egg plants are done. Lower the heat/ Kacau supaya tidak bergentel. Perlahankan api dan masak jangan terlalu lama.

Cadangan asal memang tak nak masak hari ini, tetapi lebih memeningkan memikirkan tempat hendak makan daripada memasak. Di Ipoh ni banyak sangat restuarant Nasi Kandar, tekak nak makan masakan Melayu, adapun restuarant masakan Melayu tidak begitu banyak dan biasa hujung minggu begini mesti penuh lah..jadi jalan terbaik masak sendirila. Saya buat set Melayu Kampung, Masak Lomak Cili Padi Kangkong dan Terung Pipit sama Ikan Tenggiri Asin. Cukup mantap gandingan dua sajian ini. Untuk anak-anak pula saya gorengkan ayam. Kali ini ayam goreng madu. Simple lunch tapi memang kena dengan selera saya..orang lama.
