DRIED MIXED FRUITS BAKE BREAD PUDDING



I started my Syawal Fasting yesterday. The plan was to do 6 consecutive  days.The first day of Shawwāl is Eid ul-Fitr. Some Muslims observe six days of fasting during Shawwāl beginning the day after Eid ul-Fitr since fasting is prohibited on this day. These six days of fasting together with the Ramadan fasts, are equivalent to fasting "perpetually", according to Sahih Muslim. The reasoning behind this tradition is that a good deed in Islam is rewarded 10 times, hence fasting 30 days during Ramadan and 6 days during Shawwāl is equivalent to fasting the whole year in terms of reward.

Two of my daughters staying with me joined me in this Syawal Fasting. It's easier this way, I only prepare the "buka puasa" and the girls can recover their Ramadan shortfall. So yesterday I made a simple buka puasa meal, Pad Thai, store bought sugar cane drinks and this favorite Bread pudding.


This easy recipe for bread pudding can be changed to include different fruits. Try prunes, dried apricots or currants, or even fresh fruit, such as apricots, peaches or plums. Serve your  bread pudding with vanilla custard or enjoy it with small pitcher of heavy cream or with a dollop of crème fraîche for extra richness. You can flavor this with different spices as well, try mixing in a teaspoon of cinnamon or ground cardamom. It's delicious !!! and perfect dish to end a meal.

DRIED MIXED FRUITS BAKE BREAD PUDDING


INGREDIENTS
  • 1/2 cup dried mixed fruits(raisins, green and red cherry) 1/2 cawan buah campur
  • 4 cups milk / 4 cawan susu
  • 8 stale white bread halved, triangle shape / 8 keping roti putih dipotong dua bentuk tigasegi
  • 4 eggs / 4 biji telur
  • 1 cup sugar / 1 cawan gula
  • 1 tablespoon vanilla extract / 1 sdt vanila
  • 2 tablespoon butter / 2 sdb mentega

  1. Arrange bread on the baking sheet. Pour the milk into the bread. Push the bread down into the milk and mix it a bit with a wooden spoon to get it all soaking. Place this in the refrigerator to soak for 1 hour. / Susun roti dalam loyang pembakar, curahkan susu dan tekan-tekan supaya rata. Masukkan dalam fridge dan biarkan selama 1 jam
  2. In a mixing bowl, whisk the 4 eggs, then add the sugar and vanilla extract, whisking until combined. Pour this on top of the soaked bread, and stir to combine. / Dalam mangkuk lain pukul telur dengan gula, masukkan vanilla dan pukul sehingga sebati.m Kalau suka boleh juga dimasukkan serbuk kulit kayu manis. Masukkan buah campuran 1/2 aje.
  3. Pour the mixture into. Dot with small pieces of butter and mixed fruits/ Curahkan ke dalam roti dan titiktitikan dengan mentega akhir sekali taburkan 1/2 lagi buah campuran
  4. Bake at 325° F for 1 hour or until golden brown and set. Serve warm or cold./ Bakar pada 325 F selama satu jam atau sehingga kekuningan
  5. Makes 6 - 8 servings.

Mengambil keberkatan Syawal dan selepas kenyang dengan 6 hari EID MUBARAK SPECIAL semalam saya dan dua anak dara saya berpuasa 6. Cadangnya hendak ambil straight..insyallah kalau tidak ada apa-apa hal dengan kesihatan. Anak saya Myraz memang tidak pernah miss puasa Syawal ini sejak berusia 13 tahun lagi...mula-mula main-main aje tetapi sekarang dan jadi fix routine dia, saya suka cara dia, katanya lebih baik qada puasa awal...takut umur tak panjang nak tunggu tahun depan baru nak ganti....tentang itu memang saya respect pendirian dia.


Berbuka semalam saya goreng PAD THAI aje dengan air tebu beli siap. Ada lebihan roti saya buat Bread Pudding ini, kalau semua dah puasa nanti membazir pula roti ini. Bread Pudding kali ini saya masukkan sedikit buah-buahan campur ialah lebihan dari buat cookies raya hari itu, inilah masanya untuk clearkan stok hari raya. Roti saya potong tiga segi dan susun, cantik begini bila dah bakar nampak susunan roti, ayakan ising sugar nipis-nipis atas pudding. Untuk sosnya biasalah buat vanila sos.
