GREEN MUSTARD MIX VEGE / SAYUR HIJAU SAYUR CAMPUR

This is my favorite, a Chinese Restuarant Style Mix Vegetables. I only used the green mustard, carrot and shitake mushroom. As for the green mustard I only used the stem, the leaf I used for soups. A simple recipe that you only need to blanch the vegetables, arrange in the serving plate and pour the seasoning gravy. It's really nice and crunchy.
INGREDIENTS
1 bunch green mustard, use only the stem - blanch
1 carrot cut into rings - blanch
10 - 12 shitake mushroom - blanch
250 gm shrimp - clean and spread with pepper and salts
Seasoning
3 tbsp oyster sauce
1 cup chicken stocks
2 tbsp light soy sauce
dash of pepper
1 tbsp cornstarch mix with 5 tbsp water
5 cloves garlic - chopped
1 tbsp sesame oil
2 tbsp vegetables oil for frying
PREPARATION
  1. Blanch all vegetables and arrange on the serving plate
  2. Deep fry shrimp till golden brown, drain oil and arrange with the vegetables
  3. Heat up oil and saute garlic till brown.
  4. Add chicken stock, oyster sauce, light soy sauce, pepper and sesame oil.
  5. Simmer for a few seconds and add in cornstarch. Lower heat and allow to thick.
  6. Pour gravy on to the vegetables.

Ini adalah sayur kegemaran saya, biasaanya ratah begitu aje, sedap ranggup dan rasa yang cukup hebat. Untuk memasaknya mudah aje, semua sayur dicelur terlebih dahulu, jangan terlalu lama sekejap aje agar keranggupan sayur tidak hilang. Lepas tu sayur di atur atas pinggan, mengikut citarasa masing-masing boleh memujur dan boleh juga bulat.

Kuah sayur ditumis cara Cina dengan menggunakan banyak bawang putih, sos tiram dan kicap. Dipekatkan sos dengan tepung jagung dan setelah pekat sos dicurah keatas sayur. Cara ini mudah dan keranggupan sayur dapat dikekalkan.
