Friday Buka Puasa Menu - it's our final Syakban Fasting and the whole family will take a week break from fasting and shall resume with our Ramadan Fasting in one week time. As a last day fasting I made a one dish meal, meat loaf with garlic sauce and shrimp pasta, some fresh fruits platter and Ribena - black currant store bought juice.

Simple one dish meal as tomorrow we shall start our normal breakfast schedule.

MEATLOAF RECIPE - This is an easy meatloaf recipe, not much different from making meatball. The distinction between both came from the shape.

INGREDIENTS

  • 1 1/2 pounds ground beef
  • 1 egg
  • 1 onion, chopped
  • 1 cup milk
  • 1 cup dried bread crumbs
  • salt and pepper to taste
  • 2 tablespoons brown sugar
  • 2 tablespoons prepared mustard
  • 1/3 cup ketchup

PREPARATIONS

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 5x9 inch loaf pan, OR form into a loaf and place in a lightly greased 9x13 inch baking dish.
  3. In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.
  4. Bake at 350 degrees F (175 degrees C) for 1 hour.

Semalam Jumaat adalah penutup puasa Syakban buat kami sekeluarga, jadi saya masak simple aje sebab esok udah kembali menyediakan sarapan seperti biasa. Alhamudulillah semua berjalan lancar setidak-tidaknya dapat juga lah buat 10 hari puasa sunat. 

Menu Jumaat adalah meatloaf with garlic sauce, pasta udang dan buah-buahan segar. Untuk minuman saya buat air jus ribena aje...puasa-puasa ni semua nak, tenguk iklan ribena di TV udah tergoda. Cadangan asal nak blend dengan epal hijau, tapi anak-anak dah habiskan epal hijau tanpa memberitahu saya jadi buat ribena plain aje.
