APAM JAGUNG/ SWEET CORN STEAM MUFFIN



If you have a sudden craving for something sweet for tea, this would be the best choice. It's easy to prepare, simple ingredients, it yield 6 pieces muffin size so you can avoid wastage, it's delicious and most importantly it will definitely make your day by just looking at the fluffy muffin. Ingredients
2 eggs/ 2 biji telur
80g light brown sugar/ caster sugar/80 gm gula perang atau gula caster
50g thick coconut milk/ evaporated milk/ 50 gm santan pekat atau susu cair
60g cream corn/ 60 gm jagung manis
125g self-raising flour / 125 gm tepung naik sendiri
1/2tsp double action baking powder / 1/2 sdt double action baking powder
PREPARATIONS
1. Sift flour and double action baking powder together and set aside./ Ayak tepung dan double action baking powderdan letak sebelah
2. Whisk the eggs and sugar together until thick and fluffy./ Pukul telur dengan gula sehingga kembang
3. Pour in the coconut milk and mix until well blended./ Masukkan tepung dan kacau rata
4. Lightly fold in the flour into the egg batter./ Perlahan-lahan masukan tepung dan gaul rata

5. Lastly fold in the cream corn. /Akhir sekali masukkan jagung
6. Lined cup moulds with paper casing./Alaskan acuan muffin dengan kertas cawan
7. Pour batter into cup moulds until 90% full./Tuangkan adunan 90% penuh
8. Steam in a preheated steamer at high heat for 10mins./Kukus pada api besar selama 10 minit.
9. Remove cake and cool on a wire rack./Angkat dan sejukkan.
