COCKLES AND FERN SHOOTS SALAD / KERABU KERANG DAN PUCUK PAKU


This is my favorite and I believe this is Malaysian Malay favorite Salad. This dish falls under the category of Masakan Kampung Favorite's Menu. I really ... really love this and used to just eat it even without rice. It's easy to make, just blanched everything in and mix with sambal, coconut milk and lime or tamarind juice. Great as appetizer too.  Try this.!!!!

INGREDIENTS

  • 300g fiddlehead fern tips (pucuk paku)- cut and blanched
  • 2 cups bean sprout - blancedh
  • 1 cup cooked cockles
  • 1/2 cup cooked shrimps
  • 1 onion sliced thinly
  • 1 ginger flower sliced thinkly
  • 1/2 cup rice brown and ground
  • 5 tbsp kerisik
  • 1/4 cup coconut milk
  • 1/4 cup tamarind water
For the Sambal
5 red chilies
5 bird eye chillies, sliced
1/2 " shrimp paste

Pounded all ingredients into a sambal paste


DIRECTIONS

  • Wash the ferns thoroughly. In a pot, bring the water to a boil and blanch the ferns and bean sprouts. Plunge in cold water, drain and set aside.
  • Using a mortar and pestle, pound the sambal ingredients . Set aside.
  • In a large mixing bowl, combine the shrimps, cockles shallots ginger flower and onion.Add in tamarind juice. Mix well.
  • Add the fern shoots,kerisik and coconut milk. Toss well and finally add in pounded dried rice.
